Menu Monday


I thought I'd change up pizza night and make dough today for Meatball Calzones. Basically I just stuffed them w/yummy meatballs, sauce, and cheese! I'm watching them baking up in the oven as I type!!

Wed...that's my homemade Chicken Soup hubby requested!

Thursday is a favorite w/my 3 men! The most incredible fish sandwiches we've yet to try! (I'll post the recipe this week) Of course Mini Me turns her nose up at fish....and Lily has yet to try them...

I finished the teacher gifts today.....no school today so I thought the kids could take them tomorrow!!! I sure hope the teachers like them!

Lift It Up...

While getting ready this morning Jeremy Camp's song "Give You Glory" came on the radio! He is one of my favorite artists and this song pretty much sums it up!!



Here is a picture of Little Demon Princess playing in the water....the temps have been slowly creeping into the mid 90's. We took her to the pool yesterday, but needless to say she wanted to steal everyone's pool toys and thought she could swim and can't. She didn't seem to care...and I was a nervous wreck. Hubs will hang w/her in the evenings w/the sprinkler while I take the big kids to the pool! :o)

Also ....check out her chalk artwork on the side of the house...don't worry...it washed off w/no trouble!

Why is It That.....?

the only time you have to sneeze is when you are rocking your baby and she has just fallen asleep?

the phone only rings when your hands are covered in raw dough?

the doorbell rings at the exact moment you take a potty break?

when you do take your potty break you realize the toilet paper is out...and none in the cabinet and no one is home to bring you more?

when your are looking for a dress at the store you can't find one, but when you don't need a new dress you see tons in the store?

the garbage men or mowing service for the lot behind you comes at the exact moment you put your child down for a nap?

you've been thinking of that last piece of cake all day....and you find your husband licking the crumbs off his fingers from said slice?

you go to the grocery store for the main ingredient in your recipe...only to come home and realize that is the one thing you forgot on your list?

you plan your first date w/your husband in almost a year after the baby is born and one of the kids gets a tummy bug the day of.

you wear white pants for the first time in years only to sit in something ..thus making you realize why you quit wearing white.

On another note...
Got Mini Mini Me a water table since she's obsessed w/water time. Needless to say...maybe we should have gotten her a mini pool instead of a water table? Hmmmm

Pool opens this weekend! Guess where we'll be?

Baking Bread 101...My Domestic Side


I've been feeling the need to throw on an apron and get down to business! ! I guess I wanted to do it the old fashion way...no stinkin bread machine here. Besides the fact that hubs keeps hinting how much he would ♥ to have some fresh sourdough bread made. So that is when I started out looking for a 'starter' for it. Mine is on day 3 and in the garbage. It said it was supposed to smell sour...or beer like. Well mine smelled like vomit or really really really bad stinky cheese. Not only that ...it bubbled over the top of the jar...ran down the side and all over my counter. I nearly gagged! The directions were Kindergarten easy ...so obviously I suck! Seriously...it was 1 cup flour...1 cup warm water. Let it sit...24 hrs later..pour off half...add back 1/2 cup water...1/2 cup flour and do this until it's ready (3-5 days) ummmmm ????

So I will share my new passion of making bread w/those who have always wanted to try but don't.

I've made about 5 loaves this week and this is by far my favorite recipe. Hubs went on and on...saying "WOW if you make this everyday we won't ever buy store bought again"

Here's what you'll need: 7 ingredients and most you already have on hand!!!

Active yeast 2 1/4 tsp
1 1/4 cup warm water (temp of 80-90')
1 tbs sugar 1 tbs oil (I use canola for bread olive oil for pizza)
2 1/2 cups flour
1 cup bread flour
1 tbs salt

The key here is not killing your yeast...yes I have done this before...esp b/c I didn't have a thermometer...(grabbed the one for my car)...80-90' isn't as warm as you think...it's pretty cool feeling. I had my water too hot the first time I made dough and the yeast didn't 'proof'.....lesson learned!

In a lg bowl put ur sugar/oil/water in...then sprinkle your yeast on top...stir w/a fork and wait for it to 'proof or blossom'. Depending on ur house temp it could be anywhere from 5-15mins. Look for lots of foam!


Then add your dry ingredients (flours and salt) to the bowl and give it a quick stir!

Turn this out on a kneading surface. I use a cutting board!

Flour your surface and knead for ohhh anywhere from 6-10 mins....again depending on how your kneading tech is and the temp of house. It always takes me 10 mins






Tip
When you knead bread by hand, choose a surface that allows you some leverage; you’ll be using your arms and your full-body strength to achieve the final texture. Put some flour on the surface and keep some more nearby‚ as you may need a light dusting while you’re working.


I put my board on my kitchen table. I found my counter tops are too high for kneading and I was standing on my tippy toes to get a good press. You'll know it's done w/it's elastic and you can poke your finger in it and it doesn't spring back.

I then use the same bowl I mixed it in for the bread to rise. I put a little oil in the bowl...and use my hands to grease all sides...then I roll the dough in the bowl to coat all sides..cover loosely w/plastic wrap or a towel and let it sit for about 1 - 1 .5 hrs or until it doubles in size. (a good non drafty place...in a turned off oven)


Put the dough back on your floured surface and punch down a few times...knead a few more times...roll dough in a rectangle and put it in a greased 9"loaf pan.
Then cover w/a towel and again put it in a non drafty spot for about 30 mins of rising time

I like to then rub w/butter on the top before baking!
Bake at 350' for anywhere from 40-50 mins. When you thump the bottom it should sound hollow! That's it...simple and ohhhhh so good!

Knead Some Loavin!

I'm on a ROLL...get it haha..roll..uh hem! Ok sorry...I've been baking so much bread/pizza/cookies I've got dough on the brain!

Some of you were asking for what recipe I used for my dough....I'm sure some have terrific ones too and please don't hesitate to pass them along.

Mine makes 3 big pizzas


1⁄2 cup Water (90-100 ° F)
2 teaspoons Active dry yeast
1 teaspoon Sugar
4 3⁄4 cups Bread or regular flour
2 teaspoons Kosher salt
1 tablespoon Olive oil
1 1⁄4 cups Water

1. Sprinkle yeast on top of water, sprinkle sugar on yeast and stir gently. Let sit until foamy, 15-20 minutes.

2. Measure flour, salt and oil and water into a large bowl. Add the yeast mixture and stir to incorporate. Scoop the dough onto table or countertop for kneading.

3. Knead dough until smooth and elastic, about 5-8 minutes. Time will depend on the speed and force applied during the kneading process. (mine usually takes 8 mins)

4. Round the dough and place back in bowl. Cover and let rise until doubled.

5. Take dough out of bowl and divide into pieces.

6. Round, flour generously and cover. Let rest until risen 1 1⁄2 times in size.

7. Pizza Dough is ready to use.


Yes we even went out and bought a pizza peel b/c we will be making this more often!

Hubby has been dying for sourdough bread...now there are tons of starter recipes out there and I found one that requires no yeast in the starter. I need a really really sour batch b/c hubs likes his sour. I'll give this one a shot. If you have a great recipes for sourdough starters let me know too! SOOO in 3-5 days I should have my starter yippee!

Menu Monday...

I didn't get real creative w/the menu for this week. My MIL is retiring from teaching and her school is having a retirement party on wed. She taught 8th grade History and let me tell you she has been a huge help! Especially since I have an 8th grader myself!!! I am thrilled w/the retirement. I'm hoping this means we'll get them more than just every wed for dinner. Maybe a little hang time w/GiGi during the day while everyone is at work or school! WOOHOO

I made homemade pizza on Friday. Yes, my first time to make dough ever. I realized I have all the ingredients on hand so why not! The kids were freaking out over the dough and hubby actually asked for seconds. He wanted me to make a thin crust for tonight for him. I found a recipe and it's chilling in the fridge! I didn't realize how much I enjoy making dough!

I have decided to start making cookie bouquets for gifts. For the past 3 weeks I have been baking up a storm coming up w/the best sugar cookie recipe and frosting. I think I've found the frosting. It makes a terrific glaze and holds it shape in frosting form for packing. The sugar cookie though...well...I've found 2 recipes that are good...just trying to find the 'perfect' one for packing and tasting too! I'll post pictures of my cookies as I go along! I'm thinking up of names for my cookies business adventure! So far I have "Southern Magnolia Sweets" . No one likes that name but me, but trying to find a southern name to suit me!

Jalapeno Roast Chicken

Thanks to everyone for the well wishes...Child #2 never puked at the house yesterday...never ran a fever and was he typical old self. No idea what happened or why....but woohoo he's back to my little Hedgie again!

On to some cooking ladies!!
Tonight...

Jalapeno Roast Chicken


Ingredients

Directions

Preheat oven to 400.

Combine oregano, shallot, garlic, butter, olive oil, the jalapeno and pepper in a food processor and mix until until it's a paste.

Pat the chicken dry and place breast-side up on a rack in a large roasting pan.

Carefully loosen the skin from the chicken breast, legs and thighs without detaching it (I had to use a small knife at some points, but do so carefully so you don't accidentally pierce the skin. Spread about 1/2 of the jalapeno paste under the skin.

Tie the legs together and spread the rest of the paste on the outside of the chicken.

Pour the chicken broth and wine into the roasting pan.

Roast the chicken for 1 hours 30 minutes (or until fully cooked), while basting with pan juices every 15-20 minutes. If the juices start to run out, add more chicken broth and wine to the pan.

In Laws came for their weekly Wednesday dinner and we had Frito Pie. I pack the kids lunches everyday and had a million Frito bags so what better way to use them up? Frito Pie

I posted the recipe months back click HERE for the Chili recipe. I've probably made chili all my life is this is by far our favorite. Add some tomato paste to thicken it up. (my opinion)

It's Not Funny Mom!


Yet again I fail at Best Mother award.

But I can't do puke. I mean I know I have to because it's in the job requirement, but I can't do it w/a closed mouth.

I'm one of those ones that will sympathetic gag. I smell it and I'm gone. I usually just start gagging...that's about it. Over the past 14 years I have cleaned up some doozy messes!

My kids probably hate me when they are sick. Which thank you Lord is not often.

Here's a scenario

Kids "Mommy I don't feel good"

Me "Does your tummy hurt? Do you need to go poo poo?"

Kids "No, I think I'm gonna puke"

Me "No you don't...don't think about it...think positive thoughts"

Kids "No really......" (get weird look on face)

Me "RUNNNNNNNNNNNN RUNNNNNNNNN LETS GET IN THE BATHROOM QUICK. Aim for the toilet"

Kids (retching sound)

Me "OHHH MAN THAT'S NASTY"

Kids (retching) "Mom I can't help it (retching)

Me "OH gosh Honey..I know...Mommy doesn't OH MAN THAT SMELLS...OHHHH I mean Mommy knows it sweety. I'm sorry...ewwwwwwwwwwwwwwww"

Kids (retching) "Mom"

Me "I'm sorry honey...it's not your fault...it's just gross"

(now this is the worst part...I start laughing....like total all out giggle...no idea why...maybe nervous...maybe part b/c it's a funny thing the body..puking....i mean you can't stop it...it just comes out ..which is kind of funny)

Kids (done puking) "Mom, I'm done now you can't quit laughing"

I know how horrible it is for me to giggle..I really try to stop. I guess it's my mommy defense ...and how I psych myself up to clean the bathroom.

Then I run around like a mad woman w/the can of Lysol spraying everything in sight. I keep the poor sick kid quarantined from the rest of the house. I just can't stomach (haha)the thought of having it pass to all the other kids.

Why the puke topic? Got a call from the school a few minutes ago that child #2 puked! Ugh! He looked pretty happy when I came. Said..."hey mom I made it to the trash can and no one from school saw but the nurse" haha good boy!

Beef...It's What's For Dinner.....





Last night we had steak w/a feta topping (recipe LHJ)....(totally optional for those that hate it) and creamy mac n cheese and my yummy crunchy slaw.
A few wanted to know the rub I used etc...
Drool napkins ready!

Combine 1 tbs kosher salt, 1 tbs ground cumin, and 1 tsp of black pepper. Rub steaks on both sides w/mixture. Let sit covered room temp 30 mins.

I like to get the grill started for hubs so when he gets home all he does is throw on the steaks! I bought 2 of those grill chimneys from either Walmart or Lowe's. Put some newspaper in the bottom...load up your charcoal in the other end ...light the newspaper and it will start your charcoal for you. So much easier to start the coals esp if you live in a really windy spot. When coals are gray in color then dump the coals into the grill...put your racks back on and let them heat up...viola! Instant grill and you started it like a pro!!!

For the feta topping...
combine 1 cup crumbled feta, 2 finely sliced scallions and 1 tbs chopped oregano


For an after school treat I made the kids

No-Knead Chocolate & Coconut Rolls
(recipe BHG)

They were out of this world!!! Easy to make and the smiles were soooo worth the 3 rising times!!


Ingredients

* 4 cups all-purpose flour
* 1 pkg. active dry yeast
* 1 cup milk
* 1/3 cup sugar
* 1/4 cup butter
* 2 eggs
* 1 13-oz. jar chocolate-hazelnut spread
* 1 cup shredded coconut
* 1 recipe Icing

Directions

1. In large mixing bowl combine 2 cups of the flour and the yeast. In small saucepan heat and stir milk, sugar, butter, and 1/2 teaspoon salt salt just until warm (120 degrees F to 130 degrees F) and butter almost melts. Add milk mixture and eggs to flour mixture. Beat with electric mixer on low to medium for 30 seconds, scraping bowl as needed. Beat on medium speed for 3 minutes. Stir in remaining flour. Cover; let rise in warm place until double in size (45 to 60 minutes).

2. Turn dough out onto a well-floured surface. Cover; let rest for 10 minutes. Lightly grease a large baking sheet; set aside. Roll dough into a 12x9-inch rectangle. Spread 2/3 cup hazelnut spread over dough, leaving a 1-inch edge along one of the long sides.
Sprinkle coconut over hazelnut spread.
Roll up rectangle, starting from the long side with filling spread to edge. Pinch dough to seal seams. Slice into nine pieces. Arrange 2 inches apart on prepared baking sheet. Cover; let rise in a warm place until nearly double in size (about 45 minutes).

3. Preheat oven to 350 degrees F. Bake for 15 to 20 minutes or until golden. Cool about 5 minutes; transfer to wire rack. Drizzle with Icing. Makes 9 servings.

4. Icing: In small bowl stir together remaining hazelnut spread and enough milk (2 to 3 tablespoons) until drizzling consistency.

For those wondering why there isn't any meals sometimes on Tuesday....I make everyone starve. HA HA no...the 3 big kids usually have dinner w/their father on Tuesday nights. Problem is he cancels a lot and if I plan a meal he takes them. If I don't he cancels. So I just don't plan until last minute. The kids like the surprise!!!

Wait until Thursday's Jalapeno Chicken recipe! The pictures alone are making me wish it was Thursday!

The Ways of The South

I wish I knew who wrote this to give him credit...this was spoken like a true genius...."Kindly do not give me any grief about the Confederate flag. We cannot erase history or make it more palatable to some by banning symbols. I believe the saying is, "Those who do not remember history are doomed to repeat it." For me, as for most Southerners, the flag has no connotations of slavery. It is rather a symbol of the Grand Lost Cause, the death of chivalry and honor in wartime, and an excruciatingly tragic moment in our history. Most Southerners did not own slaves, or even condone the practice. Rather, the issue over which we seceded was that nodamnyankee was going to tell us what to do. The war had far more to do with the yankee -controlled Congress' imposing tariffs to protect the north's manufactured goods, tariffs that did not benefit, indeed penalized, the agricultural South."

As a TRUE Southern Girl you should know the real reason of the Civil War and not the Lies the North tells the nation ...or school books

IT WAS NOT BECAUSE OF SLAVERY AND LINCOLN WAS A LIAR, RACIST, AND TYRANT.

If you don't have a clue what I'm talking about...it's ok...I didn't either until I became an adult and got hints of stuff about the South...realizing that the history books you read in school growing up were false. I guess it's the North's way of covering their wrong. But don't ask a Yank b/c they think us "Suthern" people are angry for losing the war.

Ok hit your google search if you'd like to read more of what I'm talking about...

Point being...Lincoln NOT a wonderful man as most lift him to believe.



Enter beginning of my story!

I married a die hard true Southern Loving Boy! He loves the true history of the South and anything and everything "Suthern". (no I didn't misspell that word)

I love this about him...he bleeds good ol' Southern charm! (another reason I married him)

He can't stand Lincoln or anything praising the man.

One day we went to eat in this small town restaurant. It's located in an old town square on a back roadnear our home. The food was great ...atmosphere was totally charming....felt like you were in an old 1800's kitchen w/the Ingalls! Anyways...we spot a decoration of a newspaper clipping on the wall . It was an old clipping from during the Civil War praising the one and only Lincoln. I thought hubs was gonna blow a fuse. He couldn't believe this would be on the wall...why this person had this article up for all to see. After our meal I could see he was gonna say something to the owner....sure enough I was right and I headed to the car. HAHA I don't mind that he does this...I just prefer not to be around. Most ppl don't have a clue about the South and my hub is the greatest of all Historians! He is brilliant beyond all measure and loves to share history stories with ppl. I told him he should have followed his mom's footsteps to become a History teacher instead of an engineer! (half kidding here)

So basically this owner was from Philly (haha) and didn't realize anything his wrong. Hubs was very pleasant about it to him (yes he has class) and then after he was in the car he mentioned that we would never eat there ever again. Simple as that.

Fast Forward 2 years later.....
I get a flier in the mail yesterday w/a down home cooking restaurant that just opened up and website. I logged on and it totally looked like the places we liked...The name seemed familiar but didn't register besides we had never been to this area of town this place was in. I told hubs that this was the place I picked for our 1 meal out for the weekend. Loaded the kids up and headed to the old country Main street to find this place. When we pulled up I realized my mistake. OHHH NO...THIS IS THE PLACE from years back ....I kept my mouth shut...I mean I was starving and this was a new location...possibly new owner. I was right...we walked in and it couldn't have been more backyard country. Totally charming. They had the most incredible antiques...old Dr Pepper machines....old back in the day wall telephones....sewing machines...cameras..It was neat to walk around and see some history of items! Food was good...kids had a great time and the owner gave us a free piece of pie! The pie was to die for...(Think I'm gonna make a Coconut Cream Pie this week now)

So my guilt was killing me and as we were driving away I spilled the beans to hubs. He had a chuckle that I was sweating bullets the whole time...and said it was fine...Different Owner...Different Location. He liked the Establishment! (grins) Gosh...see it just goes to show you...get it off your chest early! I was just so hungry I didn't want to leave! Nuthin like a little Fried Green Tomatoes to start your meal off right!

Wanna Be A Super Mom?

I've got a great cookie recipe...Ok it's not mine (most never are)

I made a batch one day and the kids ate them in 4 secs flat ....so I doubled the batch later that day to have some to freeze. They never made it to the freezer b/c the kids were handing them out to their friends on the front porch

Conversation overheard...

My kids "You have to have one of these cookies my mom just made. They are so good"

Neighbors "WOW these rock...You'll have to tell your mom to give the recipe to my mom b/c I want these everyday"

(a few days go by and I get a call from said child's mom telling me her child talks nonstop about all the food I bake and she needs recipe asap for those cookies) haha

If you bake like I do and have small kids you should have all ingredients on hand! I suggest triple the recipe and have some in the freezer for playdates!



Double Oat Breakfast Cookies
(Better Homes and Garden Magazine)

Ingredients

* 1/2 cup butter, softened
* 1/2 cup smooth peanut butter
* 1-1/4 cups sugar
* 1/2 tsp. baking soda
* 1/4 tsp. salt
* 1/4 cup water
* 1 egg
* 1 Tbsp. vanilla
* 1-1/2 cups all-purpose flour
* 1 cup rolled oats
* 1 cup golden raisins and/or milk chocolate pieces (I've only tried choc chips so far)
* 3 cups round toasted oat cereal (such as Cherrios)

Directions

1. Preheat oven to 375 degrees F. In large mixing bowl beat butter and peanut butter with electric mixer on medium to high speed for 30 seconds. Add sugar, baking soda, and salt. Beat until combined, scraping sides of bowl. Beat in water, egg, and vanilla until combined. Beat in flour until combined. Beat in as much of the rolled oats as you can with mixer. Stir in any remaining rolled oats. Stir in raisins and oat cereal.

2. Drop dough by scant 1/4 cupfuls about 3 inches apart onto an ungreased cookie sheet. Flatten slightly. Bake for 10 to 12 minutes or until edges are lightly browned. Cool on cookie sheet for 5 minutes. Transfer to a wire rack and let cool completely. Store cookies in tightly covered container for up to 5 days or freeze for up to 3 months. Makes 24 (2-cookie) servings.

Now on to breakfast for Saturday morning. I have made this probably 4 times and I if I don't serve myself first I don't get any...and I double the recipe...it's that good. Make this tonight and boom you've got breakfast ready to pop in the oven in the morning!


Cheddar-Bacon Wake-Up Casserole
(Country Home Magazine)


4 oz. dry french bread, cut into 3/4-inch cubes (4 cups)
1 1/2 cups shredded cheddar cheese
4 slices bacon, crisp-cooked, drained, and crumbled, or 1 cup diced cooked ham
2 cups milk
4 eggs, lightly beaten
2 Tbsp. snipped fresh Italian (flat-leaf) parsley
1/2 tsp. mustard
1/4 tsp. ground black pepper
1/8 tsp. onion powder

In a large bowl toss together the bread cubes, cheddar cheese, and cooked bacon or ham. Divide among six 10-ounce individual casseroles or place all of the mixture in one 2-quart rectangular baking dish. In a medium bowl whisk together milk, eggs, parsley, mustard, pepper, and onion powder. Pour over the bread mixture in the casseroles or dish. Cover and refrigerate at least 8 hours or up to 24 hours. Bake, uncovered, in a 350° oven for 25 to 30 minutes for individual baking casseroles (about 40 minutes for 2-quart dish) or until a knife inserted near center comes out clean. Let stand for 5 minutes before serving. Makes 6 servings.

Sadly one of the grades from the Elementary School are on a walking nature field trip...I saw several groups walking and looking at flowers when I came home from the store. Sadly we had a downpour happen about 5 mins after I got home. I sure hope those teachers planned on that....if not...ROFL! I'm sure the kids enjoyed it...teachers? Not So much!

Scaring Our Babies?




This morning when Little Girl woke up she usually just toddles down to the kitchen w/me and the big kids or finds me in the bathroom getting dressed for the day. Yes I said walks out...you see she has been sleeping in our big bed since she turned 12 months. She never liked the crib and the minute I decided to be a co-sleeper was the best day of our lives.
I am NOT a fan of having kids in the bed...in fact I've always thought it was a bad idea...I mean this is mine and hubs haven! This is the place we can snuggle and talk about our dreams/fears/day etc. Enter a child and boom all that changes. BUT LILY IS NO NORMAL CHILD.

From day 1 she didn't require much sleep. She totally went against all my 'routines and schedules' that I always put into play with the other children. Bed time by 7:30 or 8 depending on your little age. They would sleep through the night for at least 10-12 hrs. Nap like a dream too! NOT LILY....she doesn't want any of that. I fought for months to make her conform and I finally gave up. I'm glad I did! Life has been lovely.

I thought maybe just maybe she would sleep better w/us. When she turned 1 I gave it a try. WOWZA she slept all night. Naptime...she slept 3 hrs. (now it's 1.5-2) I called it the magic bed! It was amazing. Our lives changed. I lost our haven, but I felt our sanity came first and she did need rest.

Baby Girl usually sleeps until after 7 depending on how quiet I am...this morning she woke up at early and really needed some holding...
I rocked her in the rocking chair nursing her a bit and sang some lullabies.

I had to giggle and then just hum the rest. I mean I don't want to scare the poor dear into never sleeping again!

Conversation w/Hub and Wife Part 55 (oh and Wed Dessert)

So I'm pretty sure my husband has known how crazy I am and married me anyways.

I have a vivid imagination you could say

Take for instance ...when hubs and I were dating we would head to the dancehall for 2 stepping. We would take breaks and have a cold one while watching other couples twirl the floor. Ever so often we would see this little old man dancing the floor alone. I said that he was probably married for 50 yrs and they always came dancing together. On her death bed she made him promise he would still go and dance.

or the time...
We were sitting in the car at a busy intersection and we saw this crazy dude riding his bike through it. He was carrying a huge plastic jug of yellow liquid. I said he was probably transporting and selling clean urine for drug addicts during their drug testing.

These are just some examples you see....I mean it could be all those scenarios right? Hubs loves my stories..(I hope)

Last night I'm bathing youngest angel and we're splashing in the bubbles...I swear to you I heard in a whisper

"Laura help me"

Well I ignored it....and then it bothered me...
What if hubs was dying on the couch and had a last thought for me to save him and it was his voice I heard

So I grabbed Lil from the tub ...wrapped her in a towel and sprinted down the hall to the living room screaming....

Me "HONEY HONEY I'M COMING ....YOU OK?"

Hub (sitting on couch reading a gun catalog/magazine...looks up w/this confused look)

Me "OMG YOU OK?"

Hub "I'm reading a magazine...what are you doing?"

Me " I swear I heard you whisper 'Laura help me" I thought you were dying and those were your last thoughts"

Hub (more blank stare)

Me "So you didn't need me?"

Hub (still staring)

Me "Well say something...did you at least think of me...maybe I felt it"

|Hub "The only thing I was thinking about are how cool these gun cases were"

Me "well geez honey..I thought you were hurt or dying"

Hub "That's my crazy girl" (pats my head)

Well my imagination might have been running wild, but I swear I heard something!


Dinner for tonight w/the In Laws

Quesadillas (beef or chicken or both...you choose)
Queso
and a new slow cooker bean dip I'm trying (Gooseberry Patch)

We ♥ Quesadilla night. I get out our huge electric skillet and get my stations ready...
Generously butter a tortilla on one side....lay on hot grill....add whatever you want to stuff it w/on one half side and quickly fold over and press. Wait for it to get brown and then flip to brown other side. Cut into 3 wedges. I love these b/c they are quick easy and oohhhh so yummy. It's the butter that makes it sooo good!

Slow Cooker Bean Dip
(I'm halving this for tonight)

4 (16oz) cans refried beans
1 bunch green onion
2 (8oz) pkgs Colby Jack Cheese cubes
1 cup sour cream
1 1/4oz pkg taco seasoning
8 oz pkg cream cheese

Place all in slow cooker stir to mix. Cover and cook on low for 2 1/2 hours. Stir often
Makes 11 cups

ok Ladies on for Dessert (Family Circle pg 234 may 10 issue)

Tiramisu Bundt Cake


1 Box white cake mix
1 pint coffee ice cream, such as Haagen-Dazs, melted
3 eggs
1 container (12oz) whipped vanilla frosting
1 tsp instant coffee dissolved in 1 Tbs water
Cinnamon sugar for dusting

Yes, I'm one of those....




So yes....I do natural birth...love my midwife...(was home less than 3 hrs after giving birth!!!) and nurse my babies until they self wean.

I think it drives some ppl nuts at times about the nursing....I mean come on ...kids don't really go off to college still attached to Mom's teet!

Yes, I don't get to go away for weekend getaways w/hubs...yet...and yes it prevents me from going places w/o her, but...

I LOVE NURSING MY BABIES

Lily is almost 20 months and I honestly don't see any sign of her quitting....In fact she asks for it more during the day. I do distract her w/other things because I think she just gets bored. I know that also could mean she just wants more touch/being held.

I get sad when I hear mom's give up nursing...or don't try at all. OK before you slam me, yes yes I've heard all the stories about how you tried and it hurt or the baby couldn't do it. But I'm here to tell you that after 4 babies...I've had ALL the problems associated w/nursing a baby. Trust me...months of engorgement...sore/cracked/bleeding nipples. Babies who want to nurse 24/7 all day and night...infection...pain...sobbing (oh wait that was me) been there done that. But I stuck w/it because of the rewards.

There is nothing like seeing my babies nestle up to me and drift off in that 'drunken milk phase'...:o)

Lily will play w/my hair while she nursing...twisting it around her finger and playing w/my curls. It made my heart melt to hear hubs say the other day "I love watching you feed her...she gets so content"

I get the occasional comments of "so you going to nurse her when she's in kindergarten?"
I joke back w/...."well it's a good thing she is going to be home schooled then huh?!"

I don't judge other's (to their face that is..hee hee) who don't nurse..or who quit before the baby is ready...so why do people feel the need to give their 2 cents? I sometimes wonder if it's a deep down resentment that they wished they had stuck it out....or maybe not.

This is my choice....I choose to let her wean herself. One day she won't give me a second thought and so I cherish these close moments!

Ramblings from Mother Of the Year Herself

Worst Mother Award...yet again.

Yesterday was a great day...we actually had a bit of a cool front move in and we needed our jeans and long sleeves. Over cast and windy w/some rain....my kind of day seriously. I love having all the windows open and the house has natural light w/o the heat. Hubs watched littlest demon while she napped and I headed to the flicks w/my 3 big kids for a Mother's Day treat! We saw Iron Man II! The kids had a blast and so did I!!!
So funny thing ...I told all the kids it would be hot (I mean heck fire it has been all week) and they wore shorts...it was freezing.
Well today I told the kids it would still be cold so they wore pants and long sleeves to school. Guess what? It's hot again today! I just can't win for good Mommy award!

If Candice Olson Can Do It I Can Too

I have gotten a few emails about our hardwood floors....How do I like them...How easy to care for etc...
well....they aren't hardwood....nor are they laminate....they are none other than good ol vinyl! Yep, you read it right. When we were building this house we looked into the same hardwoods we had in the old one...problem is this house was going to have more living down...so more floor space down...way too $$$$ for our taste to do hardwoods. I was watching an episode of Divine Design later that week and the incredible Candice did fake hardwood. Come to find out it was Armstrong's Vinyl collection. I thought she was crazy until I saw the final product! I freaked and knew we should go for it. When we picked it out the design girl told me no.

Design Airhead "You can't do that"

Me "Why not?"

DA "because it's vinyl and it's not a bathroom or kitchen"

Me "what's your point? it looks like hardwood no? that's what I want"

DA "then you will have to put a 50% deposit down b/c if you back out of the house then we will have a hard time selling the vinyl"

me "are you kidding? it's going to look amazing.....take my 50% but I've made my choice"

DA "You're going to change your mind"

The second we saw it down we knew we had a winner. I wanted to call DA and make her eat her words. Real wood can wait until the kids are older...for now...all I have to do is mop and go! Greatest choice ever and very within our budget! I like seeing ppl's faces when they say they like our hardwoods when they come in and their faces when we tell them it's plastic! haha

So for those on a budget and want more options.....don't be scared to try good ol vinyl! We love it...and for the next many years we can enjoy hardwood w/o the price tag

Like Mother Like Daughter...



June 4th, 1948 is a day the world changed and was never the same! My Mother was born! Born to a woman who had 2 children of her own and knew that this child would be better off...deserved a better home...and Praise God for her sacrifice! B and Foster Jones adopted my mom at 3 days old and were 2 of the most incredible parents and grandparents a girl could ever want.

My mom is that woman that everyone steers to talk to ....she is that bright spot in the room that makes you feel warm. She was the mom that my brother's friends had crushes on growing up. For only being 5' tall she makes an impression! She knows no strangers...and I mean this literally. She talks to everyone ...at any place. Yes, she's the chick in the bathroom stall next to you at Target that strikes up conversations. Yes, she's the chick on the plane next to you that talks non stop. And when you leave from meeting her she made an impression. I found myself talking to a some random chick while washing my hands in the bathroom the other day mom.... She must have thought I was nuts!

Mom...I don't know how many times I have cracked up when you have called me sitting in the stands at any given event asking me if I know so and so b/c they lived in a town near me. Or how many times you have called me to tell me you while on vacation with dad you ran into a woman who knew a man who had a child that was friends with the neighbor of the cousin who lived in the house down the street to the house that you grew up in. HAHA I love you mom! I now know your joy of "It's a Small World" feeling...

Mom....I don't know how many times I would be walking in a store w/you and you would talk loud for all to hear saying my name in hopes someone knew us and you could strike up a conversation with. It drove me batty, but I find myself doing the same thing today

Mom....Thank you for always making us so super early for things....even waiting in the parked car outside the building b/c we got there before it opened. As an adult I am never late...in fact when my brother and I met for lunch (on those rare occasions) we always try and beat the other one there!

Mom...thank you for being a SAHM and giving me the security of always knowing I could count on you and knowing when I ran home you were waiting inside. I am passing that same security on to my children

Mom....when we sit in the front room in the dark and stare out the windows and giggle hysterically at nothing...and we're laughing so hard we nearly wet our pants...only to have our husbands think we are totally insane! Never change! I hope my girls and I do this one day too

I couldn't have asked for a better best friend and mother!

But

I will spank you if you ever scare me again like that....
You see almost 1 year ago my spunky, energetic, crazy, and fun loving mother had a minor stroke.
If you needed attention all you had to do was ask...but trust me that wasn't the way to go about it. You nearly scared us half to death! I loved you more than you could know and that day made me realize I loved you even more than I thought. My days are filled w/dozens of txt messages and phone calls and skype talks and in one instant I thought that my world had crashed!!

Mom's don't get older or sick...they stay the same....I'm not ready to lose all that yet!

Praise God for your recovery...(I think the angels weren't ready for your spunk just yet)


So this Mother's Day....Know you are loved by many, but most of all you are loved by your only daughter! You mean the world to me and I am glad I am the woman I am today because of you.
