First Timers Make Me Smile!


My skirts tight...I know you didn't ask, but I'm telling you. So are my shirts...I always carry high and they are starting to get tight in all areas. Seems early really...but not that I'm surprised. It's baby #5 and all. I showed earlier and earlier w/each one...I guess this one is no different. 9 weeks and I don't look it. Makes me realize how big I'm gonna get before too long and the comments will start

"OHHH how far along?"

"___ # weeks"

" OHHH you're huge...are you sure there's 1 in there"

"well this is #5 so I showed sooner"

You see this scenerio happened w/baby #4...I wanted to start and lie about when I was due so I didn't get those reactions!

This is where I get tickled at 1st time Mom's. It was 14 yrs ago for me so I don't remember how I acted...but I do know the maternity clothes were hideous back then and I wasn't in a hurry to wear them!

I'll read blogs of girls having their first and they are taking pics of their bellies at 5 weeks on....I hate to tell them but nothing will happen for a long while. That reminds me of my neighbor who ran down to show me her belly at 6 weeks pregnant w/her first. I just smiled thinking to myself...ummm that was there before you got pregnant. But I kept my mouth shut like a good girl.

Why on earth are they wanting to show so early? Do they realize you are pregnant for 40 weeks? That's a long time really and trust me you will start to show and then some! By the end you will wish you were able to see your feet let alone walk w/o waddling! Sit back...enjoy your slow growing belly and relax.

To my neighbor who is 20 weeks and the same size as me ...settle....No reason to be jealous! Ha ha. I've got so many weeks ahead of me it's not funny!

On a foodie note...
I lost my favorite recipe for my Bacon Broccoli Quiche. It made 2 pies and was the best thing I've ever eaten. it's been years since I've made it and sadly my memory has so many recipes floating in it I can't pull it from my memory bank! I'd been reading every recipe online, but none sound like mine. I found one that looks good...it calls for whipping cream instead of milk...? I've never made one like that.
I can see the recipe card in my head...it has a tiny picture of the quiche I cut from the magazine on it. WHERE ARE YOU RECIPE??? I'M CRAVIN YA

Menu Monday....Never Fear

Never you fear Photoshop is here! Ok I miss my camera....esp when Lily is doing the obvious cute stuff and it's Monday! Instead I hopped on photoshop and made my own!!!

Tonight is the old stand by....angel hair and all that jazz!

Tues...I have been craving cibatta rolls and BLT...but w/o the T and arugula instead of the L...thinking of doing either an avocado spread or just layering them on!

Wed is totally wishful thinking. Since the In Laws come over every wed and last wed date night was fun...why not try it again???!! I'm dying to try a place called Fireside Pies!!! Hubs looked at the menu board last night and said...

Hub "What's up w/Wednesday night?"
Me "Date Night"
Hub "Why?"
Me "Because it was fun and I want to go out again"
Hub "Why?"

UGH honey!!! Men! The In Laws don't know it yet, but I figure I'll spring it on them when they get in the door. I mean they really don't come to see us and if I have dinner and dessert (my FIL is a huge choc freak) then all can't go wrong!

For dessert I'm making

4 Layer Chocolate Dessert
1 1/2 c. flour
3/4 c. chopped nuts
1 1/2 sticks butter, melted
8 oz. cream cheese, softened
1 c. powdered sugar
2 (8 oz.) containers Cool Whip
3 1/2 c. milk
2 tsp. vanilla
2 sm. boxes instant chocolate pudding
FIRST LAYER: Mix flour, melted butter and nuts, saving enough nuts to sprinkle on top when completed. Spread over the bottom of a 9 x 13 pan. Bake 20 minutes at 350 degrees; let cool.

SECOND LAYER: Use mixer to blend cream cheese, 1 container Cool Whip and powdered sugar. Pour over crust and spread carefully with a spatula. Refrigerate while fixing the next layer.

THIRD LAYER: Mix 2 boxes instant pudding with milk and vanilla. Beat until thickened and spread over second layer. Refrigerate 10 minutes.

FOURTH LAYER: Spread remaining Cool Whip over top and sprinkle with nuts.

My mom used to make this when I was younger....for some reason it hit me yesterday and I can't get it out of my head! It's super the next day so I'm gonna make this on Tues to let the flavors marry!!!

Slow Mooooo Noooooooooo

Do you have those moments where you see your child reaching for something and your insides are screaming....and everything goes in slow motion. But you know if you scream out loud it will scare the child and could make the situation worse...so you just have to watch in terror?

Well that happened to me on Thursday while I was making the Bacon Ranch Mac n Cheese dish

Let me set the stage...

Me..at kitchen stove cooking bacon...I've got my back to Lily, but being a mom w/eyes in the back of her head I know Lily is playing far from the grease on the other side of the island playing w/her bucket o babies watching Little Bear. Lily's latest "look how bad and talented I can be trick"...is to scoot the bar stools and climb on top to use the computer...(or get whatever is up on the island counter)

I hear a stool scrape back on the floor and turn to say "Lillian...you need to get down please" ..she gets down...back to cooking....
I hear stool again....I keep my back and tell her that she needs to listen to mommy. I hear giggles...as I turn around I see her grab my camera strap and yank backwards.

That's when the SLOOOOOW MOOOOTION NOOOOOOOOOOOOOOOOO comes into play. I'm thinking please don't let go...just as she lets go. Crash...my camera hits the ground. eeeeeeek my fault my fault my fault.
I usually leave my camera by my computer...easy for downloading fast and quick to grab when I need it. Well big mistake. I turn camera on...all is working...flash pops up...LCD screen lights up...I see the menu...lens looks good...nothing looks broken....I take a picture...lcd screen shows black image. OHHHH NOOO so I try different settings....(yes the lens cap is off) and then try downloading the images to see if maybe they are there...nope...black.

Now who's going to tell hubs? UGH...needless to say he wasn't happy...and I had to remind him I didn't point out he shouldn't have been speeding a few weeks ago when he got the ticket...that I didn't need to be reminded not to leave my camera on the island top.

Yesterday I mailed my camera to Canon...NOOOOOOOOOOOOOOOOOOOOO
1. I'm w/o a camera...that's like being w/o a child haha...
2. No telling the cost of this ....warranty didn't cover drops and I couldn't lie...so here I am paying the price. Hubs had to rub salt in the womb by saying that he was going to give me an accessory budget to buy stuff for my camera...but now that budget is used for my repairs..and then some! You're mean...can't you see I'm beaten down already?

I've got to find Mini Me's camera (it's not fancy and uses batteries which are sucked dry in 5 mins of taking pics) and use that for photos for the next few weeks or months...sniff sniff...HURRY CANON AND DON'T BREAK MY BANK

On to recipe reviews

Bacon Ranch Chicken Mac n Cheese....

Skip the chicken ...add tons of bacon...and serve as a side dish. This was really fantastic, but we felt better as a side w/o the chicken in it

I made the Strawberry Shortcake by The Pioneer Woman for Father's Day. It called for an 8" round...I used a heart shaped pan!


The cake w/the strawberries and juices running inside the cake were fantastic....but I along w/everyone else that ate the cake thought the icing was a bit rich and not as tasty as we thought. I even picked the icing off to eat the cake! I am sooooo making this cake again but using whipped topping instead of icing! I can't wait for that yummy treat!

Today our neighborhood is having Independence Day celebrations. Yep...a whole weekend before. They do this every year and I can't stand it. I like celebrating on the day of! But we're venturing out...sans camera sniff sniff. Fireworks start at 10pm.....little miffed at the time..but what can ya do? Not like Lily will be asleep anyways! haha Watch my luck she'll pass out at 9:30 tonight only to woken by the fireworks....that's my luck lately!

WooWee....Dating Hubee





Yep you read Wednesday right...Instead of the In Laws coming for dinner....they came to babysit. Ok I was a good daughter in law and still cooked for them, but hubs and I took off and had dinner together! AW it was soooo nice to get out alone! We headed to a local Italian place for some over priced grub, but we didn't care...it was just the 2 of us. I was told how beautiful I was and he held doors and pulled my chair out! AWWW to be young and in love!! (I did look hot...since my boobs haven't totally exploded into 'hey I'm pregnant and let's grow 5 sizes' I wore a black strapless dress! haha)

The 3 big kids are gone to camp this week....and it's been super quiet. I won't lie, I'm loving the clean house. AND I HAVE ONLY DONE DISHES ONCE SINCE MONDAY! Hub called Monday and Tues and said 'DON'T COOK I'M BRINGING TAKE OUT' You rock...!

Tonight on the menu....No idea if it's any good, but how can cheese, chicken, bacon and noodles go wrong?


Bacon Ranch Chicken Mac n Cheese

A tablespoon of flour stabilizes the milk so that you can bring the sauce to a boil. The combination of onion and garlic powders plus fresh dill creates a flavor similar to ranch dressing.

Yield: 4 servings (serving size: about 2 cups) (11pts for you WW ppl)
Ingredients

* 8 ounces uncooked elbow macaroni
* 1 slice applewood-smoked bacon
* 8 ounces skinless, boneless chicken breast, cut into 1/2-inch pieces
* 1 tablespoon butter
* 1 tablespoon all-purpose flour
* 1 1/2 cups fat-free milk
* 1/3 cup condensed 45% reduced-sodium 98% fat-free cream of mushroom soup, undiluted
* 3/4 cup (3 ounces) shredded six-cheese Italian blend (such as Sargento)
* 1/2 teaspoon onion powder
* 1/2 teaspoon garlic powder
* 1/2 teaspoon chopped fresh dill
* 1/2 teaspoon salt
* Cooking spray
* 1/2 cup (2 ounces) shredded colby-Jack cheese

Preparation

1. Cook pasta according to package directions, omitting salt and fat; drain.

2. Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving drippings in pan. Finely chop bacon; set aside. Increase heat to medium-high. Add chicken to drippings in pan; sauté 6 minutes or until done.

3. Melt butter in a large saucepan over medium heat; sprinkle flour evenly into pan. Cook 2 minutes, stirring constantly with a whisk. Combine milk and soup, stirring with a whisk; gradually add milk mixture to saucepan, stirring with a whisk. Bring to a boil; cook 2 minutes or until thick. Remove from heat; let stand 4 minutes or until sauce cools to 155°. Add Italian cheese blend, onion powder, garlic powder, dill, and salt, stirring until cheese melts. Stir in pasta and chicken.

4. Preheat broiler.

5. Spoon mixture into an 8-inch square baking dish coated with cooking spray. Sprinkle evenly with reserved bacon and colby-Jack cheese. Broil 3 minutes or until cheese melts.

Menu Monday Surprise!


Thought I'd change the menu up this week for ya! Haha....After the miscarriage in March I was scared silly after we got pregnant this time! I thought do we wait to tell ppl or do we tell? I've kept the secret in longer than I thought! :o) 8 week this week!

I knew in order to feel less anxious I needed to see the baby this time...we went this morning for an ultrasound and saw and heard terrific news! The baby looks fantastic and the heartbeat was strong! What a true miracle to hear the sound of your baby's heart beating!!

When the tech captured the image of the baby for me to keep she noticed the yolk sac above the head...I told her it looked like a halo.....she said, "HOW COOL IS THAT? Your very own Angel Baby"


Soooo sweet angel has a nickname....Angel Baby.....I'm sure the baby we lost in March is keeping a close eye on this one for us!

My due date puts me around February 2nd. I've never made it to my due date, but I sure would love to this time...a Love Bug month baby sure sounds swell!

A Day In My Life with Lily

I think she broke the mold on little creatures! I've said it before and I'll say it again...She is nothing like the other 3 kids and she gives me a run for my money! On a daily basis the child doesn't sit still...she is constantly moving and shaking discovering new things and how they work. She also watches everyone around her like a hawk and will mimic your every move! Sometimes I spend more time picking up a room after her I don't get a chance to clean the house...I've felt like a horrible wife lately! You can have a room clean...walk off to get laundry and walk in and can't tell you even spent 10 mins straightening it. (deep sigh) I've been so exhausted lately that I feel like the chores are growing.

Thank Goodness for summer...the kids have been a huge help. My new rule...? "If you walk past a Lily Mess Stop to Bless" ...in other words...CLEAN IT UP!

The other day I dropped Mini Me off at a party ..just down the street mind you. I was gone all of 45 mins b/c they had a little baby and I couldn't keep my hands off him!! When I came home.....dear hubs was asleep on the couch and Lily had emptied the pantry....and this is what I found by hubs...Blackmail photo


The other morning I went to unload the dishes....got called away...(sidetracked) and this is what I found upon my return....


This morning I had a cup of coffee....and you know how it is with Mom's and coffee right? You put it down and have to reheat it 3 times to get a cup! I hear the words "OHHH Yummm Toffee" I realize she means coffee and run in to see this...
(never fear I drink decaf and so much creamer it's not funny)

Ok Ladies....tonight on the menu? Grilled Chicken, Black Bean and Corn Salsa and Garlic Mashed Potatoes!
My mother couldn't stop eating the salsa....I had to take it away so we'd have it for dinner still.
I usually double it and triple it when I take it to a party!

Black Bean and Corn Salsa

1 15oz can black beans (rinsed and drained)
1 cup frozen corn (thawed)
1/2 chopped red bell pepper
1/2 cup chopped cilantro
8 green onions (chopped)
3 tbs lime juice
2 tbs balsamic vinegar
1/2 tsp cumin
1/4 tsp salt
and my add....1/2 cup El Fenix Salsa (it makes this rock)

Stir together and serve!

DQ...My Mum

DQ= Drama Queen = My Mum

She's one of those ones that when you're driving in the car and she sees a car a million miles braking...she'll scream "look out that car is stopping" She gives drivers heart attacks everywhere.

She will hear a loud noise and scream..which startles anyone else around her too.

2nd child used to have a weak stomach...or something...he could just puke when the wind changed....or when he got nervous. Which brings me to my next Momma DQ story.
About 4 yrs ago a tornado was coming into town....we had no idea...my parents came in for the weekend and we all went to dinner....During dinner we hear the Weather Sirens going off outside to alert us something heading our way....we looked at the televisions in the bar and noticed a tornado was near....I thought it best to just keep eating and stay put, but hubs thought we should hit the road. Little did we know we were driving into it....the hail was huge and nailing our car...we could barely see and couldn't find an underpass to get under. As a parent you don't panic or your children will...All I'm thinking of is that the hail is going to smash the windows and we'll get cut.

(family in back of suburban strapped in..hubs and i in front) I look at him w/that..."WOW this looks bad" look. My mom starts doing her DQ act..."OHHHH WOW this is horrible...omg...where do you think it is...omg. omg ..omg maybe we should pull over." I turn around to shush her.
She keeps at it....All of the sudden you hear

"HURL HURL HURL HURL"

Yep 2nd child is puking his guts out! Thanks DQ...she had to clean it up when we got home b/c she was the one freaking out.

So my dear mum is in town for the week to visit!

We went to Wally World for some things and upon walking out a car (5 rows away) decided to peel out. My mom screams! She wants to call the cops b/c the truck was driving reckless in the parking lot. When we got home the kids were telling hubs how Mee Mee freaked out and screamed b/c of the car. She tells the story and her version is the truck was next to us and we were all gonna die!

A few nights ago we took Lily on a walk down to the pond to see the ducks...We're looking down at the water and I notice a snake...totally cool...the kids see them all the time in the water but I have yet to ....So I'm like..."heyyyyyyyyyyy let's follow him to the other side of the bridge."


We run across the street to wait for him to swim under and that's when my mom and I notice a few more lurking in the bushes below waiting for it's prey (fishes or turtles) DQ is totally freaking out. Keep in mind this is under a bridge by the creek...almost impossible to try and get down to w/o getting injured..so no sane person would try....notice I said sane!

DQ-"Don't you ever ever let the kids swim in this" (ok why would I let them swim in the nasty lake in the first place)

DQ-"those could bite the kids...don't let them get one" (Ok why would I let the kids catch one of these snakes to play with?)

DQ-"ohhh I'm freaking out let's go before they move"

So we continue w/our walk to another lake to see the ducks and I can't resist

Me "OMG LOOK A SNAKE"

DQ (jumps and screams)

Me "haha ...sorry ...there isn't one...I couldn't help it"

so of course the rest of the way home I'm shouting "SNAKE" to get a rise out of my mom! She's so easy to fool!

Whatcha Putting In Your Body?


As a parent we research things into the ground...or heck half the time I do. If I hear something that sparks interests in me than I try to find as much as I can.

Using a midwife? Well that's b/c my experience was horrible all 3 times in a hospital....Midwives get such a bad rep and I'm not sure why?! After having Lily at the birthing center w/my incredible Midwives I will never set food in a hospital again....still wondering what you will do? It's a personal decision...but I suggest you rent "The Business of Being Born". on netfix

Our decision to not vaccinate Lily or ever again for the big kids? Well again another personal decision. I guess I was starting to questions why shots went from 8 to 36 in the past 20 years. Do they even know the effects long term...(ie when those kids become adults?)
Why are food allergies on the rise? I never heard of one child in my grade growing up ever being allergic to peanuts. Now there are Peanut Free zones everywhere. Why is asthma on the rise....the list could go on. I have seen sooo many cases infertilty in women in their 20's lately. WHY?

What are in these shots we are injecting in our babies? Why on earth would they make our child spike a fever and be fussy the day of? I realized I was listening to what the media and AAP said and wondered what their agenda was for pushing these poisons on my kids? So we decided to do delayed vaccinating w/Lily. We are waiting until way over 2 yrs of age and then we are choosing only a few shots. The brain develops and grows the fastest in the first 2 yrs of an infants life...we wanted to give Lily's every chance to not have something hinder that. And go figure...Lily is our healthiest kid of all 4. Even with the germs the big kids bring home from school...she's never been really sick other than runny nose. I can't tell you how many ear infections and colds and other issues the big kids had the first 2 yrs of life.
AGAIN PERSONAL DECISION. But I challenge you to look at the ingredients in your child's shots!

Lastly I was wondering about Fluoride. Ok why is it harmful to swallow, but we are adding it to our water to drink? What is Fluoride? Hubs asked me if I really wanted to know? He gave me the documents he pulled up and I nearly wept!
According to the handbook, Clinical Toxicology of Commercial Products, fluoride is more poisonous than lead and just slightly less poisonous than arsenic. It is a cumulative poison that accumulates in bone over the years.

A study by Procter and Gamble showed that as little as half the amount of fluoride used to fluoridate public water supplies resulted in a sizable and significant increase in genetic damage. Epidemiology research in the mid-1970's by the late Dr. Dean Burk, head of the cytochemistry division of the National Cancer Institute, indicated that 10,000 or more fluoridation-linked cancer deaths occur yearly in the United States.


In addition to the well documented toxic effects of fluoride, fluoride even at dosages of 1 part per million, found in artificially fluoridated water, can inhibit enzyme systems, damage the immune system, contribute to calcification of soft tissues, worsen arthritis and, of course, cause dental fluorosis in children. These are unsightly white, yellow or brown spots that are found in teeth exposed to fluoride during childhood.

Menu Monday and My Momma's Coming



I'm uber lazy this week. I've only made it through Wed. night's dinner. You see my AWESOME little momma is coming to stay for the week and she is pickier than any child you know. Half the time she turns her nose up at everything...and guess what...sometimes she hasn't even tried it yet. So I've left a few days open for change!

Tonight? A little pan fried breaded chicken...with melted parm cheese on top of a bed of angel hair w/some sauce. Oh and garlic bread...we can never forget that in our house!
(Yes I went easy tonight)

The kids are super excited to get her for a week...Me too...I'm seeing a Mani/Pedi in my future!!!

Looking for something to do w/the kids today? Whip this Fun Dough up in secs
Use any color of food coloring paste to create a rainbow of gifts.



Prep Time: 20 minutes
Yield: Makes about 2 1/2 cups nonedible dough
Ingredients

* 1/2 to 3/4 cup warm water, divided
* 1 teaspoon white vinegar
* 2 cups all-purpose flour
* 1 cup salt
* Food coloring paste

Preparation

1. Stir together 1/2 cup warm water and 1 tsp. vinegar.

2. Combine flour and salt in a large bowl. Slowly stir in water mixture with a wooden spoon until a stiff dough forms, adding up to 1/4 cup more water, if necessary. Knead until smooth and workable. Divide dough into portions, and add desired amount of food coloring paste. Shape dough portions into blocks. Store in refrigerator in a zip-top plastic bag.

Dirt.....In it's Finest!


Dirt...

A handful of years ago Mini Me told me something...

Mini Me "Mommy...?"

Me "yes honey"

Mini Me "Did you know my eyes are the color of the sky?"

Me "Yes they are as beautiful as the bluest skies or the deepest of blue oceans"

Mini Me "Mommy ...yours are the color of dirt"

Me (deep sigh) "yes honey...yes they are"

I've always dreamed of having something other than plain brown eyes....I have 4 kids and can you believe not 1 of them have brown? My father has gorgeous blue eyes and my mom has brown (like dirt too)

I'll never forget the time (forgive me mother) that my dear mom wanted to get colored contacts to change her eye color. She went for blue and we all died laughing. She looked like she had huge cataracts! She was sooo mad at us for laughing...but thankfully never wore them in public! I thought that one day when I was a mommy I'd have children with brown eyes and they would be plain jane's or joe's.

I will never forget being in grade school and kids would ask if I saw in everything in brown. Odd at the time I didn't say back "No do you see everything in green or blue?"

It wasn't until I met my hubs. His favorite country girl singer at the time was Sara Evans and she had brown eyes. One of her songs at the time was about a brown eyed boy. He made me feel soooo special. Said he knew out of all the women in the world he would marry a brown eyed girl! (think of all the other songs out there about us plain jane's) So a brown eyed boy married a brown eyed girl and had a little princess with green eyes! (Lily) Wonder what # 5 or 6 will have? What are the odds not brown? Btw ...hubs are not the color of dirt...his are like the light brown M&M's they no longer seem to make in the packages!

Having 4 kids you witness a lot of little different things...Some good...some not so good....In any given day multiple things happen that I have a hard time keeping up with. Here take a look inside....

2nd boy "Hey mom...thanks for the new toothpaste...it tastes like Zucchini" (I didn't even know he liked zucchini)

Mini Me (sobbing sobbing)
Me "Did the boys hurt you again?"
Mini Me (Shakes head w/tears streaming)
Me "Are you hurt?"
Mini Me (shakes head w/tears still streaming)
Me "Well I can't help you if you don't tell me what's wrong"
Mini Me (sobs while trying to talk) "I'm still sooo sad about my Justin poster that's missing"
Me (Man, really? shesh....little girls)
Me "But honey...we went to the store and bought you a new magazine to have new posters"
Mini Me "you don't understand mom"
Me (She's right I don't!)

Littlest child gathers all her babies....goes under the kitchen table to proceeds to feed them "mommy milk" I hope this doesn't make her OctoMom in the making!

Mini Me "Mom will you buy me Colgate toothpaste?"
Me "I just bought you new toothpaste"
Mini Me "I know, but next time I'm out...Justin uses Cologate toothpaste
Me (here we go again)

Me (talking to oldest child) "You need to clean your room"
OC "It is clean"
Me "Since when?"
OC "Since today...."
Me "Show me"
Oc and myself walk into his room
Me "This isn't even close to clean...your room is about 20% clean
OC "Well your 20% is more like my 80%"
Me "Clean!!!!!"

OC "What's up with your hair?"
Me (touches hand to head)
OC "well?
Me deep sigh we went to the pool last night and my hair frizzed from the water. I didn't straighten it before bed...this is the result! Scary monster!

Oh hubs started his own blog....so I noticed I wasn't on his side bar.
Me "hey ....how come you don't have me on your side bar of favorite blogs you follow"
hubs "b/c I don't want chick mommy blogs on my side bar...this isn't that kind of blog"
Me " but I'm your wife...who cares if it's a 'chick mommy blog. I should be first on the list"

ugh....I'll post his blog later as he posts more. Don't judge on what he writes! I even asked if I could help w/his header...he said for me not to touch it and make
it girly! UGH what? I'm not adding flowers and such puuuulease!

More on the Justin Beaver Saga

SO hubs didn't grow up w/any sisters...just a mean older brother (ok ur not mean anymore Spencer)

Now remember from the JI NA Justin Beaver post I talked about how Mini Me was screaming b/c her poster of her True Love was missing. She accused the boys of stealing it...

Guess who it was?

HUBS....I mean really? Ok so he didn't have a sister to torture so he is going to pester his daughters! But he went about it all wrong...he actually THREW away the poster. I told him you are only supposed to pretend that you did...not actually do it! (Deep sigh...slaps head)

She is sooo sure her brothers stole the poster....I was too.. I mean heck fire they play jokes on her all the time. She has asked if we can head to Target today to buy another one. Poor girl has her money purse all ready to go. (Little does hubs know...I'm using his money to buy a new one)

Dinner last night rocked! For those looking for a fantastic meal...you have to make the Pesto Farfalle! I forgot to add a photo
I normally don't like chopped tomatoes on things, but it makes the dish! (I stole some for my lunch today b4 the boys could go in for 3rd...how bad mommy-ish is that?)

Menu Monday..



Tonight is Grilled Chicken w/Pesto Farfalle! Ohhh yea baby!!

Now I cheat and buy 2 rotisserie chickens from WallyWorld and just shred it in a container and use it for the week when a recipe calls for chicken. (like my quesadillas this week)
  • 20 ounces uncooked farfalle (bow tie pasta)
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 1/2 cups 1% low-fat milk, divided
  • 2 tablespoons all-purpose flour
  • 1 (3.5-ounce) jar commercial pesto (about 1/3 cup)
  • 3/4 cup half-and-half
  • 2 cups (8 ounces) shredded fresh Parmesan cheese, divided
  • 4 cups halved grape tomatoes (about 2 pints)
  • 1/2 cup chopped fresh basil

Preparation

1. Cook pasta according to package directions, omitting salt and fat. Drain in colander over a bowl, reserving 1/4 cup cooking liquid. Place pasta in large bowl.

2. Heat butter in a medium saucepan over medium heat. Add garlic to pan; cook 1 minute, stirring occasionally. Combine 1/2 cup milk and flour in a small bowl, stirring with a whisk. Add milk mixture to pan, stirring constantly with a whisk. Stir in pesto. Gradually add remaining 1 cup milk and half-and-half, stirring constantly with a whisk. Cook 8 minutes or until sauce thickens, stirring frequently. Add 1/4 cup reserved cooking liquid, remaining 3/4 teaspoon salt, remaining 1/2 teaspoon pepper, and 1 cup cheese; stir until cheese melts.

3. Add chicken and sauce to pasta, tossing well to coat. Add tomatoes and basil; toss gently. Sprinkle with remaining 1 cup cheese. Serve immediately.

The flavors in this are unbelievable! For those who are on WW it's 11pts!

Today is Monday...for those confused. I mean I know I am. The kids got out last Thursday and hubs took off Friday and so needless to say I'm turned around. The good side to this...I had Mini Me go w/me today to do my grocery shopping! I only had my heels run into a handful of times...luckily they were selling new ones on aisle 5! :o)

I got a really great nap today too w/littlest baby.....aww nothing like threatening your children with violence if they make a sound a quiet house when napping with a sweet baby!

This weekend we once again tried taking Lils to the pool. The last time she was more interested w/stealing other ppl's pool toys at their tables or bags. This time we were armed with our own pool toys. It worked for a few minutes. Then she saw a plastic cup (trash) on the ground and brought it into the pool for scooping water. All was well. UNTIL she wanted to walk around the pool.

Problem is the depth changes and it goes above her head. She didn't care. She wanted us to turn her loose....so we did...she went under...we pulled her up...she wanted more. I'm thinking...'hey this is great...our child didn't freak when going under and wants more'


Only that was a problem...she didn't want us to hold her. She wanted to keep walking under the water....and trying to breathe! Yes our child is hard headed...hence why she never sleeps.

We saw some kids playing over by the shallow area and they were lounging on their backs in the water...She walked right over to where they were...got right in between them and mimicked laying on her back too! I busted out laughing. She cracks us up!

Needless to stay she was screaming bloody murder and fighting us b/c we wouldn't turn her loose. I went home and ordered one of these.

Hopefully this solves the problem until I can teach her to swim!

From Ji Na's to Fighting Kids...


UGH...see what happens when the kids get out of school on a Thursday...Hubs takes off work on Friday...and I never get sleep! Today doesn't feel like Saturday...or is it?

No the magic new big bed isn't working. She will start off on her side and ends up next to me to get a boo-boo. Any tips for weaning at night? I hate being hit by her

Have you ever as a Mom told a fib?

So I'm bathing littlest demon in the tub...it's bubble bath night....I like this quiet time b/c little girl can splash and I can sit there watching her splash and read my book or magazine. I mean granted it's only 10 mins of reading bliss, but 10 is 10. So I sit on the top of the toilet lid...splash w/baby...read and then BOOM..

Door opens

Mini Me busts in sobbing b/c her Justin Beavers (as I like to call him) poster was missing. She is screaming at the boys accusing them of taking it.

(baby starts pointing to body parts saying each one...she gets to vagina and starts shouting "JI-NA JI-NA JI NA")

The oldest boy runs in behind her screaming "Justin's gay...but I didn't take the poster"

(still screaming JI NA JI NA JI NA)

2nd boy screams from other room...."I agree w/Grayson...Justin's Gay"

Which only makes Mini Me cry harder

"NOOO he's not gay...he's awesome...I love him"

(JIIIII NA JIIII NA)

boys "Justin's stupid too and so is his hair"

"MOOOOOOOOOOOOOOM make them stop"

So I stand up...announce I'm going to take a poo and those who want to watch can stick around and start to pretend to hike up my skirt to make the kids scurry away!

Whew...then I just sit back on the toilet lid w/a smile on my face pretending to poo!

I mean a mom's gotta do what a mom's gotta do!

Little girl is still shouting 'JI NA JI NA JI NA"

So I say..."Yes sweetie that is your Ji Na..." and she quits!

I love Mommyhood! Can't wait to add more! (wink)

Fishy Fishy Fishy.....


Tonight on the menu?

Basil Mayonnaise Fish Sandwiches w/Salt & Vinegar Chips and bottled Root Beer!!
This is by far a favorite in my family! Except for Mini Me...but then she turns her nose up at pretty much everything.

Basil Mayonnaise
1 cup light mayo
1 tsp grated lemon rind
1 tbsp fresh lemon juice
1 cup loosely packed fresh basil leaves

Process all ingredients in a food processor or blender until smooth, stopping to scrape down sides. Store in airtight container in fridge for up to 1 week.
Makes 1 1/2 cups

Fish
2 lb firm fish cooked (I use Tilapia)
1/4 tsp lemon rind
1/4 cup fresh lemon juice
2 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1/4 cup purple onion thinly sliced

Flake fish in a medium bowl. add lemon rind and juice, oil, salt and pepper. Tossing gently to coat.

Now it says to spread the mayo mix on the bread and then layer w/fish and onions....BUT what we found tasted yummy was mixing some of the mayo mix in w/the fish first! woohoo!!


Bought Littlest Girl a flower swimming pool to play in....she got so tired from playing that the next thing I noticed she was laying down w/her head on the edge...the look on her little face was priceless! I'm glad I captured it!

How Big is Your Bed?

So I'm sure you have heard me whine talk about how Lily co-sleeps. But she doesn't just co-sleep she rules the bed. We stick her in the middle and inevitably she ends up smashed against my body while hubs has miles of room. I mean we have a king sized bed for pete's sake you think she'd find room of her own. Top it off that she still nurses at night (yes I WAS too lazy to make her quit, but not anymore) Every time she would press against me she would rouse and want a boo-boo. Well I'm TIRED OF IT....I told hubs we need to build a platform for her twin bed the height of our big bed and put her in it.

This weekend hubs and Tk's hubby built said platform

On Saturday night I thought I would finally get some great sleep...nope...she was freaked by it and wouldn't sleep on it. Sunday afternoon I asked her ...Mommy's bed or Lily's...well guess where she chose? Her's and she slept a great nap....same for bedtime...I asked again...she said Lily's...she slept until 4am ...asked for a boo-boo...(yes I gave it up) and she stayed on her side! Then slept until 7:45 am! I got the best night sleep in ages! Now in a year I'll move this bed to her room and BOOM...haha

You have to understand this co-sleeping is foreign for me....the 1st 3 kids were sleeping in their own beds by 4 months w/no issues! Lily breaks the mold!

Yea Me though for getting some sleep and using my brain about building the platform. We can fit a small army in it...maybe even more kids! (wiggles eyebrows)

Tomorrow Jake (2nd child) has some food project where they have to bring a certain food from different regions of the country to share with the class. He got the North East section. We'll I'm a Southern Girl...so I don't do that food (kidding.. I do love Lobster...clam chowder and all that) ...haha.. the North East does grow cranberries sooooo I baked


Glazed Cranberry Orange Loaves


Ingredients:
Bread
3 cups all-purpose flour
1 1/4 cups sugar
1/2 teaspoon salt
1 tablespoon baking powder
1/2 cup pecans, coarsely chopped
3/4 cup (1 1/2 sticks) butter or margarine, melted
1 orange
2 eggs
1 1/4 cups milk
1 cup dried cranberries

Additional pecan halves (optional)

Glaze
1/2 cup powdered sugar
1 tablespoon orange juice

Directions:
  1. Preheat oven to 350°F. Lightly spray bottom of Mini Loaf Pan with nonstick cooking spray; set aside. In Classic Batter Bowl, combine flour, sugar, salt and baking powder. Chop pecans using Food Chopper; add to batter bowl. Mix well and set aside.
  2. In Small Batter Bowl, microwave butter on HIGH 45-60 seconds or until melted. Zest orange to measure 1 tablespoon zest. Juice orange to measure 1/4 cup juice. Add zest, juice, eggs and milk to butter in batter bowl; whisk until combined. Add butter mixture to dry ingredients; mix just until dry ingredients are moistened. Do not overmix. Gently stir cranberries into batter.
  3. Fill each cavity of loaf pan with about 1 cup batter. Top batter with additional pecan halves, if desired. Bake 40-45 minutes or until Cake Tester inserted in center of loaves comes out clean and tops are golden brown. Cool in pan 5 minutes. Loosen sides of loaves from pan; remove to Stackable Cooling Rack. Cool completely.
  4. For glaze, mix powdered sugar and orange juice until smooth; drizzle evenly over cooled loaves.


This recipe is from Pampered Chef...I used to be obsessed with all their gadgets...
I would make this recipe in the past for teacher Christmas gifts ..A yummy in your tummy easy peasy recipe! Trust me...you will double the batch like I do! (Gotta have some for yourself too!
