Miscellany Monday......Taz Devil and 10 to go...

one.   taz

If you had a day like you me you would ask for a do over too.  It starts off the same....6:30 am.  Either Reid or Lily decides that is the time I should wake.  I'd prefer 7 myself but then again it hasn't been up to me in the past 3.8 yrs...I prob got another one of those to go too huh!!
By 8am I was ready to sit down and cry.  Reid is seriously like the Tasmania Devil  (you remember the cartoon huh?)  Where he would whirl into the room...destroy and leave again?  Yep Reid....

He loves dumping the dog food water and food out....Hubs said "hey hun...the dog food is down"  I heard him, but I've got a million things on my plate and forgot....Reid didn't

I finally grab a cup of coffee and sit on the couch to put my feet up...I hear the dog food bowl dump...I know the water prob went first...I jump up and sure enough..he's sitting in a pool of water that is now spread in  literally a 5ft radius....and dog food mixed in.  I pick Dude up and move him into the gameroom with the big kids playing games....I'm on my hands and knees mopping up the mess...that seems never ending....I notice Dude not in gameroom....glance up and over into living room....there sweet angel is sitting on the rug playing with toys....
Only I realize he's no angel....and I realize my cup of coffee (full travel tumbler mind you) is on the ground.....I scream...jump up from my water puddle and run to see the coffee on the floor....I think that's not bad....but it dawns on me.....IT WAS A FULL CUP....I glance at the couch.  This is when I let out a scream! 

"NOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO"

You see...my fault really....the couch isn't the couch you want kids to spill on....YES YES I UNDERSTAND I AM ABOUT TO HAVE 6 OF THEM...but we never eat in there.....deep sigh.

He dumped the whole cup on the couch.  I panic.  Unzip the tapestry cover hoping the down cushion under isn't soaked....(just a spot) and did my best to scrub the cover....it feels crunchy today :o(

Oh but Reid isn't finished there.....

I get the messed cleaned...wanting to cry....

Take him upstairs to take my shower....I normally lock him in my bedroom with me and he can roam my room and bathroom while I shower...I've since moved any object bad out of his reach....so I feel pretty safe...

Only I forgot the boy is into climbing....

I glance out and notice he has climbed from the garden tub onto my sink and is inside my sink. 

This would be about the time I just lathered my hair with shampoo.  I freak b/c HE COULD FALL OUT OF THE SINK TO THE FLOOR....I jump out shooting shampoo suds everywhere and get him down.

Only for him to hit me and try to climb up again.  My showers used to be a place I enjoyed....now?  Not so much

I glance at the clock?  10:00 am....I want to cry again

This Monday hasn't started off good...and if it's any indication of the rest of my day I'm in trouble!

Last night was sort of thrown together kind of enchiladas....I took shredded chicken, rotel, cheese, sour cream, cumin, salt/pepper, purple onion (i forgot my cilantro....boo)

Rolled those in tortillas....poured some drained rotel over them...baked them with foil...and last five mins I melted some cheese.  I served this with Ree's Mexican Rice

three.  summer summer summer

I know most are a fan....but I'm not ready for the "mom where are we going today" to start.  I think they think b/c it's summer we will be going somewhere everyday and spending money while we do it.  I guess they will be a bit shocked huh?

four.  my other half

My crazy silly and fun sized Mom is coming in this weekend.  She will be staying until the following weekend.....I'm prepared for a fun filled week of laughing....She not only drives me insane but cracks me up!  Bring it on Mom....

five.  pottery barn

If you know me you know my love of Mason Jars for drinking glasses.....I took the little babes to the mall on Friday  (it wasn't as bad as I assumed.....give them some Chick Fil A nuggets and they were silent.....anywho)  I walked past the window of pottery barn and saw these beauties...

I totaled all this up and for 12 mugs (with handles...I lack these), drink dispenser, galvanized base (yes didn't come with it), and galvanized 3 tiered tray...I'd need over $250.  HAHAHAHAHAHA

So what does any girl do?  She googles the objects and finds the same ones (if not better) for cheap.

Found a Drink Dispenser at Dillards for $39 instead of $69  (and it comes with a stand instead of spending another $25)

Found the exact mugs 12 for $24 instead of PB 6 for $24

Still searching for the 3 tiered tray....

Why oh why PB do you have such cute things?

Thanks to Texas deciding to jump so late in the game ...we vote today.   Always fun taking 2 kids in tow!  Is there anyone left in the race to vote for?

I still feel terrific...isn't that a bad thing?  I'm as big as a house though...and down to 2 week midwife visits....I'll post a picture later when I feel like it....just Picture a house...and then you have me!

Ok I may not NEED, but I sure WANT.  I have some leftover candy bars hidden....figured I had all the stuff on hand...might as well make the kids an afterschool treat today

Must Make Meal....

I'm eating pie with my coffee....no judging.
You know if you had some coconut cream pie leftover in your house too you'd sneak in a small sliver while the kids were at school.  If not....YOU WOULDN'T GET A PIECE.

Last night was dinner with the In Laws....what I make?

Both of which had me (and yes I was the one that cooked these) ohhh and ahhhh'ing with happiness.  Quite embarrassing really....(not)

I didn't find a thing I didn't like...all things can be improved though...

The girl who blogged about the chicken has a much better photo than mine...she actually cut into hers....I was too much in a hurry to eat...(seriously...when pregnant with a houseful of ppl...you'd better hurry and eat)  Or maybe it is I just forgot!  (scratches head and looks around)

Ingredients:

  • 1 tsp olive oil
  • 4 cloves garlic, chopped
  • 1 1/2 cups (1 medium) zucchini, shredded
  • 1/4 cup + 2 tbsp Romano cheese (or parmesan)
  • 3 oz part skim shredded mozzarella
  • salt and pepper to taste
  • 8 thin chicken cutlets, 3 oz each
  • 1/2 cup Italian seasoned breadcrumbs
  • 1 lemon, juice of
  • 1 tbsp olive oil
  • salt and fresh pepper
  • olive oil non-stick spray 

Directions:

Wash and dry cutlets, season with salt and pepper.  Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.

In a large skillet, heat oil on medium-high heat. Add oil when hot then saute garlic a minute, or until golden. Add zucchini, 1/4 cup Romano cheese, salt and pepper and saute about 3-4 minutes, stirring occasionally. Set aside to cool. When cool, add mozzarella cheese and mix to combine.

Lay chicken cutlets down on a working surface and spread 3 tbsp of zucchini-cheese mixture on each cutlet. Loosely roll each one and keep seam side down.

Combine breadcrumbs and grated cheese in one bowl; in a second bowl combine olive oil, lemon juice, and pepper in another bowl.

Dip chicken in lemon-oil mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spraywith oil spray.

Bake 25 - 30 minutes. Serve immediately.

I may or may not have snuck a half of some of the chicken for today's lunch

The lemon-oil mixture I think helps bring out the flavor .....great addition!
The kids actually ate zucchini ...(they say they hate it)  You mix anything with Parm/Mozz cheese and you have a winner!!

As for the corn.  My mouth was watering before I spooned a bite in.

This is from Southern Living November 2011.  If you don't subscribe you really must....I have been for over 16 yrs and I have never ever been disappointed.  In fact...I felt excited b/c for a handful of months my cousin was an intern for them taking photos.  One issue she was sitting in some chairs in the background during a 'photo' set up for an outdoor woods party they did. 

(sorry ....I got off track)

Again I followed the recipe to a T and didn't feel like I should change a THING....ok maybe add some chopped sauteed jalapenos ....but not everyone likes a kick in their corn.....

Fried Confetti Corn
  • 8 bacon slices
  • 6 cups fresh sweet corn kernels (about 8 ears)
  • 1 cup diced sweet onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1 (8-oz.) package cream cheese, cubed
  • 1/2 cup half-and-half
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper

Preparation

  1. 1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 2 Tbsp. drippings in skillet. Coarsely crumble bacon.
  2. 2. Saute corn and next 3 ingredients in hot drippings in skillet over medium-high heat 6 minutes or until tender. Add cream cheese and half-and-half, stirring until cream cheese melts. Stir in sugar and next 2 ingredients. Transfer to a serving dish, and top with bacon.
 As for dessert?  I was craving Coconut again (sorry again Neely)

I felt I was justified in eating it (and now)  b/c for the past 2 days I have been walking with a buddy.
Thanks to this fb garage site I met a neighbor who has 3 kids.  She wanted to find someone to walk with early in the mornings before it gets hot.  I have been dying to go walking ...more fun with a partner.  Makes walking 3+ miles much more enjoyable with someone to TALK THEIR EAR OFF chat with!  We're gonna try and keep the fast pace until I can't move anymore.  This is just what I needed hopefully to keep my swelling mild.  (haha yeah right)

I'm glad I've found a new friend....

Miscellany Monday.....29 Weeks....

one.  Menu Monday....

I've missed my Chalk Menu Board.  So have the kids....I set up a wipe erase board on the inside of the pantry, but it's not the same. 
When we built the wall of cabinets....My board had to come down. 
Needless to say I've been lazy and haven't pulled the hooks out to hang again.
I added the 'photoshop' forks to the wall...thought they would but cuter than arrows....

two.  29 weeks....

Time is flying....I still feel great.....I mean I have the normal 'by the end of the day I'm exhausted and pass out sitting next to hubs on the couch'  phase.  I have slight acid heartburn on the back of the tongue and chest thingy.  I think my toes are swelling....haha I guess feet and ankles are next.
I look like Dolly Parton on top.  
I caught a glimpse of my hips on Saturday in the mirror and wanted to pass out.  I think I'll skip the mirror view from the side from now on.


three.  Dude Friend

This child will be the death of me.  He has truly kept me running more times than I can count this past week.  He's finally learning to hike his leg onto things and climb....and keep climbing until he's so high his mommy wants to puke. 

His new found climb is on top of the kitchen table.  He just laughs when he sees me coming with my "No Sir" Mommy eyes....!!

four.  Fb Garage Sale

I mentioned eons ago about how we have a community garage sale FB site...well there's 3 of them.  I literally list something and sometimes in seconds it's gone.  I just listed about 5 clocks  (yes I'm weaning my clock obsession down)  They were gone in minutes and had about 5 ppl in line in case the first ppl passed.  This extra cash is nice.

Well I have met a ton of new friends....You get to chatting with these mom's when they come to the door and then you'll end up buying something from them...and back and forth.  You know me and my people person chatting skills......I've not met a stranger yet  (I didn't say I haven't met some strange ladies)  I seriously won't go into many details of what this one  lady was telling me but....

Standard is you drive up to the house with your cash when buying.....I will leave the car running with the windows down so the little babies can see me at the door...you knock....say who you are and hand cash....they hand item...you can either chat for a bit or walk off.  

I have a pretty good feel for who is like me (clears throat) you know the chatty crazy kind and who's not.   We (meaning the buyers) usually txt saying we will be there in 5 mins or say we are there ....to let the other mom know to have stuff ready.  

This one lady wasn't even close to being ready.  She was running around and was like "oh why don't you come in...."  I politely declined pointing to the car and waving to the kids.
She proceeded to tell me all about her day and then about her 'womanly' cycle and her 12 yr olds too (eww)....and then about how she got pregnant.  I was totally grossed out just wanting to run.  I had my money in hand and literally wanted to shout  "PLEASE NO MORE I CAN'T TAKE IT ....JUST GIVE ME MY STUFF AND TAKE YOUR MONEY" 
Instead the nervous side of me was just laughing.  I was shocked at the details she was going into....

Needless to say I didn't really want her stuff anymore...I wanted to run far away and shower!

Another lady came to pick stuff up and went into detail of how her husbands ex wife lives down the street from me and is a psycho.  I got an earful.  Then she proceeds to tell me how she herself is on Prozac and gained 5 lbs....she lifts her shirt to jiggle her belly.  I kid you NOT. 

BUT

That being said I have met some woman who have me in the good kind of stitches....girls who instantly become my friends! 

One of the mom's shares a passion for reading just like me....she stopped by yesterday and dropped off a stack of books for me to borrow....Ok hello?  I love friends like that!!!

Needless to say I love this garage sale site.  I have literally sold stuff that has been sitting there for ages that I was too lazy to get rid of.  Take a photo and put a price and next thing I have cash. 

five.  Grocery Store

Last night I did my weekly grocery shopping ALONE mind you....The lady in front of me's stuff kept falling on my side....(I had one of those plastic divider thingys) 

I get home and had a few of her things that I PAID FOR...blah...I hate that.  Funny thing....I think I'll keep them.  One was a box of

I'm usually not really a fan of this stuff (read the imitation bacon bits...gross) ....BUT
on the back was a recipe really worth trying.  For Smokey BBQ Chicken Salad.  So that was a $1.89 worth extra spending.

The other thing was 2 pairs of those no show panty hose socky things.  Odd.... but even odder that Kate had been asking for some with her flats last week.  I kept those too.  Sorry to the lady who got home w/o her stuff....(granted I paid for them haha)  She was nice...I think I chatted her ear off....so maybe she wanted to run from me too??!  (grins)

2010 2011 and 2012

Those are the years of the pages I ripped out of magazines to make tonight's dinner.....
2010 and 2011 from where else?  Southern Living....and the last one from Family Circle.  (Do you see a trend of things I like?)

It's Wednesday dinner with the In Laws....So get in your car and head on over....we always eat well on these nights.

Balsamic Garlic Chicken Breasts
Squash Casserole (has french's fried onions on it y'all)
Rolls
Chocolate Hazelnut Layer Cake

  • 4 (6-oz.) skinned and boned chicken breasts 
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1/2 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 1 tablespoon fresh lemon juice 
  • 3 garlic cloves, chopped
  • 1 1/2 teaspoons honey

Preparation

1. Sprinkle chicken breasts with salt and pepper

2. Melt butter with oil in a large skillet over medium-high heat; add chicken, and cook 6 to 7 minutes on each side or until done. Remove chicken, and keep warm.

3.Add chicken broth and next 4 ingredients to skillet, and cook 5 minutes or until slightly thickened, stirring to loosen particles from bottom of skillet. Serve chicken with sauce.

  • 4 pounds yellow squash, sliced
  • 1 large sweet onion, finely chopped
  • 1 cup (4 oz.) freshly shredded Cheddar cheese
  • 1 cup mayonnaise
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon garlic salt
  • 1 teaspoon freshly ground pepper
  • 2 large eggs, lightly beaten
  • 2 cups soft, fresh breadcrumbs, divided
  • 1 1/4 cups (5 oz.) freshly shredded Parmesan cheese, divided
  • 2 tablespoons butter, melted
  • 1/2 cup crushed French fried onions

Preparation

  1. 1. Preheat oven to 350°. Cook yellow squash and sweet onion in boiling water to cover in a Dutch oven 8 minutes or just until vegetables are tender; drain squash mixture well.
  2. 2. Combine squash mixture, freshly shredded Cheddar cheese, next 5 ingredients, 1 cup breadcrumbs, and 3/4 cup Parmesan cheese. Spoon into a lightly greased 13- x 9-inch baking dish.
  3. 3. Stir together melted butter, French fried onions, and remaining 1 cup breadcrumbs and 1/2 cup Parmesan cheese. Sprinkle over squash mixture.
  4. 4. Bake at 350° for 35 to 40 minutes or until set.

  • 2 cups cake flour (not self-rising)
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 4 ounces unsweetened chocolate, chopped
  • 2 teaspoons vegetable oil
  • 1 1/2 cups buttermilk
  • 8 ounces bittersweet chocolate, chopped
  • 1 cup heavy cream
  • 1/2 cup Nutella
  • 1/2 cup chopped hazelnuts, plus more for garnish (optional)

Directions

1. Heat oven to 325 degrees F. Coat two 9 x 2-inch round baking pans with nonstick cooking spray. Line bottoms with wax paper; coat paper.
2. In a medium-size bowl, whisk together flour, baking soda and salt.
3. In a large bowl, beat butter until creamy. Add sugar and beat until fluffy, about 2 minutes. Add vanilla and beat in eggs, 1 at a time, beating well after each addition.
4. Place unsweetened chocolate and vegetable oil in a small microwave-safe dish and microwave until melted, about 1 minute. Stir until smooth. Beat into butter mixture.
5. On low speed, beat flour mixture into butter mixture in 3 additions, alternating with buttermilk. Beat on medium 1 minute. Divide batter between pans.
6. Bake at 325 degrees F for 35 to 38 minutes, until toothpicks inserted in centers come out clean. Cool on wire racks 15 minutes. Turn cakes out onto racks; remove wax paper. Cool completely. Trim cakes with serrated knife if necessary.
7. Place chopped bittersweet chocolate in a medium-size bowl. Bring cream to a boil and pour over chocolate. Whisk until smooth. Cool to room temperature; cover and chill until good spreading consistency, about 30 minutes.
8. Place 1 cake layer on a serving plate. Spread Nutella over cake layer; sprinkle 1/2 cup chopped nuts evenly over Nutella. Place remaining cake layer on top. Spread chocolate mixture over top and side of cake.
9. Garnish with additional hazelnuts, if desired. Let standat room temperature until set.

  I have yet to test any of these recipes....but I don't have to...I can just tell my socks are going to be blown off I've been craving squash and hazelnut (no, not together) and these recipes called to me.  The reviews were all positive and one person on the squash dish said they sauteed the squash and onion in butter instead of cooking them in boiling water...I might just have to agree and do that....

Chipotle Spicy Chicken Sandwiches...

I find most of my recipes from magazines.  I sometimes have stacks and will just rip pages out of food....sometimes it's years later before I get to that stack (and kicking myself when I do)  Turns out I was on time this month and found Guy Fieri's recipe in BHG in the June 2012 issue.  

I thought it would be good......I just didn't know it would rock my socks off....and the kids.

So run to the store and buy yourself some buns and chicken...most of everything else you will have on hand (if you cook a lot)

I did alter the recipe since I didn't want to search high and low for a certain spice.....and the chicken still rocked.....so it's up to you if you use it......

Guy Fieri's Grilled Chicken Tortas with Chipotle Crema

Ingredients

  • 2 ounces achiote paste (ground annatto seed)  THIS IS WHAT I OMITTED
  • 2 cloves garlic, minced
  • 2 tablespoons plus 1 tsp. lime juice
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 4 boneless, skinless chicken breast halves (1-1/2 lb.)
  • 1 recipe Chipotle Crema (I doubled)
  • 1/4 cup thinly sliced sweet onion
  • 1 1/2 cups finely shredded iceberg lettuce
  • 1 ripe avocado, pitted, peeled, and sliced
  • 1/4 cup crumbled Cotija cheese or queso fresco
Directions
1. Break up achiote. Combine with garlic, 1 Tbsp. of the lime juice, paprika, cumin, a pinch of cayenne pepper, and kosher salt. Thinly slice chicken horizontally. Mix with garlic-lime mixture to coat. Cover and refrigerate for 30 minutes. Prepare Chipotle Creme. 

2. Chipotle Crema In a bowl mix 1/4 cup sour cream, 1 Tbsp. sauce from a container of chipotles in adobo sauce, 1 tsp. lime juice, and 1/2 tsp. honey. Season with kosher salt.  (FOR THE CREMA I JUST TOOK ABOUT 3 CHILES AND CHOPPED THOSE UP FROM THE CAN PRETTY FINE AND MIXED THOSE WITH THE SOUR CREAM AND LIME JUICE AND HONEY AND SALT.  Does have heat so test before adding more or less)

3. For chicken, heat grill to high. Using tongs, wipe grill with an oil-blotted paper towel. Grill chicken 3 to 4 minutes per side until well-marked. Transfer to a plate. Drizzle remaining lime juice on chicken. Drizzle cut sides of buns with olive oil. Grill for 1 minute. Turn; grill 30 seconds. Slather buns with Chipotle Crema. Layer bottom bun, grilled chicken, tomato, onion, lettuce, avocado, cheese, and top bun. (I cooked my chicken on the stovetop....I didn't feel like getting grill out)

I had the platter of chicken out with all the sides for adding to their sandwich set out too....The crema made the sandwich along with the Queso Fresco!!!  

This took no time to throw together.....and the kids rushed to the kitchen when they smelled the chicken cooking begging to start.....I'd say we have a winner

Miscellany Monday.....I'm a Grouch

one.  Mother's Day

I sure hope your Mother's Day was better than mine. 

It did start off at 6:30 when Reid woke...(as he does every morning)  I guess he didn't get the memo to sleep in
Mini Me had a surprise homemade card from her Kindergarten days all the way to 5th grade about all the things she remembered about me and loved....It was sweet....I thought things were looking up.  

I was wrong.

After that it went to pot.  I ran errands early that morning and brought lunch home for the fam.  When I walked in the door with a baby in my arms and a bag of food....I stood in front of (no names mentioned) and they wouldn't take the bag but hollered for others to grab it.  REALLY?  So I kept carrying it to my destination hoping the bag wouldn't tear.

Then I cleaned the kitchen.....had 2 wiggly jumping kids on my belly wanting to play while mommy tried to rest....(btw...a belly full of baby isn't a trampoline) No one came to my rescue.  Then after baby went down for nap I ran to the store for weekly groceries.  No one bothered to go for me.

Came home unloaded and got no time to put feet up since Dude was awake from his nap.  I was so tired I wanted to cry

The day pretty much kept going like that.  I was short tempered needless to say.

Then again....Hubs says it's a made up Hallmark Holiday ....so why bother giving Mommy one day to sleep in out of 365 and put her feet up for once.  (bitter much?)

Shows my great parenting skills that no one cared.  (yes still bitter)


two.  Strawberries

I'd better get my act together and make another batch of Strawberry Rhubarb Jam before the strawberries go to pot (yes I'm gonna keep saying the saying)

Last year I made 3 batches and 1 batch of Cherry jam....AMAZING....thanks again LeAnna for showing me a fun passion....(and it didn't hurt that I won a giveaway with a starter kit in it and cookbook)

I'm ready to roll up my sleeves (as if I am wearing any in this heat) and get'ta'jaming

three.  Dude Friend

He has evolved into Man Boy.  He hits, attacks, bites, screams, and wrestles when he's angry.  It's gotta be something boys are born with.....He isn't learning by example.  Not ONE of the other kids ever bit or attacked ppl when they didn't get their way.

Dude went into Rabid Dog attack and lunged for her and bit her back.  Part of me was like ..."Served you right Lily for being rude"  but of course the other side of me is like "REEEEEEEEEEEEEEEID NO SIR WE DO NOT BITE" ......No idea how to stop the boy when he gets angry.  
He's now into slapping me when he's mad at me.  Which seems to be daily since I won't hold him 24/7
I'm in new territory here.

ON bright note....He still cracks me up doing the most funniest things ever.  
His vocabulary is growing too.  It seems like overnight he will add a new word.  Makes me happy and sad.  Happy because he's growing up....Sad because he's growing up.

four.  28 Weeks

Yeppers You read that right.....28 weeks......12 to go.  Is it really possible?  I need a belly shot in here considering the fact that this pregnancy is flying by and I have no documents other than these blog posts.

I like this....keeping it real....Reid wanting to see the yellow light flashing...Lily shouting 'CHEESE' in every shot I had.  At one point I had an action shot b/c she was jumping.  

Life is good at this moment!
 
I feel terrific other than feeling tired....I feel like the more I clean/pick up/run errands/cook/wash...it's never enough.  Again showing off my great parenting skills b/c my children act as if it's torture when I ask for help.  Even Lily told me yesterday she couldn't lift her hands to help pick up her toys that they were invisible.  Needless to say a stern talking too made her jump and run for toys.  I don't like having to ask twice.

six.  Summer Break

Are you ready?  I am not sure I am.....Every one DOES sleep in thankfully  (except for Reid of course and Lily makes it to about 7am)  I'm not ready to do more than the 3-4 loads of dishes I already do a day.  I'm not ready for the 'WHAT DID YOU MAKE FOR BREAKFAST"  or  "WHAT ARE YOU MAKING FOR LUNCH" to start.  Deep sigh.  They are old enough to make their own breakfast and lunch...and not only that....me and the small ones eat by 8am....when you wander into the kitchen at 11 and ask me for breakfast you already started off on the wrong foot with me.

This post today seems whiney....and I guess it is.....I'm tired.....did I mention that before?

I'd kill for one day off to nap and do NOTHING like the rest of the gang

PDA Get A Room....

Last night I got to Runaway sneak off after putting Reid to bed and meet up with a few bloggy friends ....Neely and Caitrin for dinner last night....Hello Mi Cocina!  I adore their salsa and margaritas (when not preggers) and their sunset style enchiladas or fajitas.  

They were kind enough to wait on me until I could arrive....I actually made good time....Dude went down in seconds flat and I bolted out the door.....

I don't get out much and was shocked at how crowded the area was for a Thursday night....(ever been to the shops at Legacy?)  A cute little square of shopping and trendy restaurants.  I say trendy b/c yet again I don't get out much.   I couldn't find a parking space and drove the loop a few times.  Ended up scoring one with a label that said Hr Parking.  If you know me I have to follow rules....I'm sure I drove the girls crazy wondering if my car would be towed.  (it wasn't for the record)  Thanks girls for putting up with me.

Dinner was great....friends and conversation was great....but I kept spying this couple off in the distance getting cozy.  They were all alone at this big round table...with a huge wall of mirror behind them....So I'm sure anyone could see them.  I point the couple out to the girls....I mean surely it wasn't my imagination.  

Then the lady...(if you call her that) climbed into his lap.  Now for starters the couple wasn't young....so there was no excuse to label them "young and immature" here....

Then she's literally almost eating his neck and then he's 'talking' to her chest.  I'm really appalled and shocked at their behavior.  Heck fire we're not at Mc D's (ok ok not as if that should be allowed there either but)

So what does any shocked girl do?  I hold up my cell phone to snap a few photos of them.  I was hoping they'd see and quit...but nope.

Now unless he was going off to war and this was the last time she was going to see him...then I can understand...but seriously...take it somewhere else.  

At least it made for great table talk.

What's Inside the Pregnant Belly Tonight

When you have a big family you need to constantly be thinking of the next meal....b/c goodness knows if you don't....a ton of little mouths will be....and hey....it's my job!

My weekly menu gets planned usually the day before I go shopping....and it gets changed again and again. 
Oh the joys of a pregnant belly.  One minute it sounds divine...the next I can't even think about it!

As most of you know....Wednesday is the dinner with the In laws....that's the meal that gets 'good' food as my kids call it and a dessert!  I try to tell myself that I CAN have sweets just on Wednesday only...(yesterday I did sneak in some Coconut Fudge Bluebell Ice Cream....mmmm it's sooo good) 
I'm addicted to coconut lately (sorry Neely) There is something about that sweet coconutty goodness that I can't quit dreaming about.

I pulled out another Southern Living recipe March 2011....(photo and recipe via Southern Living)

Lemon-Coconut Pound Cake Loaf

  • 1/2 cup butter, softened 
  • 1 1/3 cups granulated sugar
  • 3 large eggs 
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt 
  • 1/8 teaspoon baking soda
  • 1/2 cup sour cream 
  • 2 teaspoons lemon zest 
  • 1 cup sweetened flaked coconut, divided
  • Lemon Glaze

Preparation

  1. Preheat oven to 325°. Beat butter at medium speed with a heavy-duty electric stand mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.
  2. Stir together flour, salt, and baking soda. Add to butter mixture alternately with sour cream, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in lemon zest and 1/2 cup coconut. Pour batter into a greased and floured 9- x 5-inch loaf pan.
  3. Bake at 325° for 1 hour and 5 minutes to 1 hour and 10 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove from pan to wire rack, and cool completely (about 1 hour).
  4. Spoon Lemon Glaze over cake, and sprinkle with remaining 1/2 cup coconut, divided

Gonna go with Beef....my men want beef....

So off to The Pioneer Woman's recipe for her Steak Bites...and then some mashed potatoes and green beans....and of course...a meat and potatoes meal isn't complete without rolls!

Ingredients

  • 1 pound Sirloin Steak (without Much Gristle) Or Pre-cut Beef Tips
  • Kosher Salt To Taste
  • Fresh Ground Black Pepper To Taste
  • 2 Tablespoons Butter

Preparation Instructions

Trim off the large obvious piece of fat that runs along the side of the meat. Next, cut strips less than 1-inch wide. Rotate the meat and cut into small bite-sized pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
Next, turn on your ventilation fan overhead. Heat the skillet over medium high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, then brown, before you add the meat.
Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan – if it doesn’t, the pan isn’t hot enough. Don’t stir or disrupt the meat for 30-45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds—just long enough to sear the outside of the meat but NOT cook the inside.
Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

You don't even want to know how many lbs of beef I bought....I swear my boys can eat 2lbs a piece....oldest is over 6' and seriously weighs 137.....I think when he eats it goes straight out his legs....I always tell him I can give him some padding....he just looks at me like I'm gross....I wish I had to eat to keep weight on like him.....

The weather yesterday was incredible...it was cool and breezy and overcast.  They kept threatening rain and thunderstorms....I guess our sky didn't get the memo to let loose!

While cooking I watch the kids play in the backyard....I noticed Reid slipped off and saw his little head over by the fence....He was still there a few mins later....and a few mins later....I thought what on earth is he looking at....

Hubs had been watering a plant that he was trying to revive and forgot to turn the hose off....Reid found it and was enjoying himself.
