It's the Pan....It Made Me

Donut Pans

Have you seen them?  It's my new obsession.  You saw how the other day I made some Cinnamon Sugar Donuts?

Well then later that day I used the same recipe and omitted the cinnamon and nutmeg combination and instead folded in some mini chocolate chips (I just poured some...I didn't measure)
and made a Nutella Glaze for the top

Oh sweet Bessie were those delish

Nutella Glaze

1/2 cup powdered sugar (sifted)
1-2 tbs HOT water
1-2 tbs (I used like 4) nutella

mix all together adding water to thin until desired consistency

My children inhaled them yesterday and my oldest and I quote told me "Mom you NAILED these"

So they saved them for their breakfast this morning and instructed me to make more 

My In Laws were coming for dinner and my MIL saw my IG pictures and sent me a txt letting me know Chocolate Donuts were her FAVORITE.  I got the hint and made these today

I used the recipe over at Joy the Baker, but not her glaze

For my chocolate glaze

3/4 chocolate chips
3 tbs butter
1 tbs light corn syrup
1/2 tsp vanilla

I heated in the microwave for about a min and then stirred until smooth

Chocolate Baked Doughnuts with Chocolate Glaze
makes about 10 doughnuts
recipe adapted from Shutterbean
For the Doughnuts:
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup light brown sugar, packed
1/2 cup buttermilk
1 large egg
4 tablespoons unsalted butter, melted until just browned
1 teaspoon pure vanilla extract

Place a rack in the upper third of the oven and preheat oven to 325  degrees F.  Spray a doughnut baking pan with nonstick cooking spray and set aside.

In a medium bowl, whisk together flour, cocoa powder, baking soda, salt, and brown sugar.
In a small bowl, whisk together buttermilk, egg, melted butter, and vanilla extract until thoroughly combined.

Pour the wet ingredients into the dry ingredients and fold together until all of the ingredients are well combined.  Scrape the bottom of the bowl to ensure that you’re not leaving any flour behind.  

Use a small spoon to portion batter into the prepared doughnut baking pan.  Each doughnut mold should be about two-thirds full.  Bake doughnuts for 11 to 13 minutes or until a skewer inserted into one of the doughnuts comes out clean.  

Remove from the oven.  Allow to rest for five minutes before inverting doughnuts onto a wire rack to cool completely.  

Allow doughnuts to cool completely before glazing.

During my many many pans of baking donuts lately....I HAVE SINCE REALIZED  it is BEST to FILL to the top.  Recipes say 3/4 full but I messed up on my first few batches and the hole filled in. I used an apple corer to punch the hole out


They were sad and puny when filled 2/3  or 3/4 full

SO go for it!

Sweets ....It's Ok

I love sweets.  I am learning everything in moderation and NOT to give up a passion of mine


I did NOT sample my St Patrick's Day cookies, but I did sample the bottom half half of these bad boys this morning with my coffee

While at the gym the other day I saw Ina Garten making these and I knew I wanted to try these for the kids.  I ordered the pans on amazon ($7 a piece and free prime shipping baby) and broke out and made them this morning!

I thought I would put the batter in a pastry bag and pipe in...UH NO.  It was just easier to use a spoon and do it that way. 
Another thing not to do?  Don't fill to top.  My hole filled in and I needed to use my apple corer to remake the hole.  (live and learn)

These tasted perfectly springy perfect and I can't wait to find other recipes for plain w/a chocolate ganache icing

Baked Cinnamon and Sugar Donuts
  • 2 cups AP flour
  • 1½ cup sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ½ tsp. kosher salt
  • 1 large egg
  • 1¼ cup milk
  • 2 tbsp. unsalted butter, melted
  • 2 tsp. vanilla extract
For toppings
  • ½ cup butter (1 stick), melted
  • ½ cup granulated sugar mixed with ½ tsp. ground cinnamon
  1. Preheat oven to 350 degrees. Spray doughnut pan with non-stick cooking spray
  2. In a large bowl whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt. Then in a small bowl whisk together the egg, milk, melted butter and vanilla extract. Take the wet ingredients and add them to the dry ingredient bowl. Mix together until just combined.
  3. Spoon the batter into prepared donut pans filling about ¾ths the way.
  4. Bake for 15-17 minutes until doughnuts spring back when poked.
  5. Let doughnuts cool for 5 minutes.
  6. Prepare the cinnamon and sugar mixture
  7. Dip both sides of donuts in melted butter and then sugar

To let you know we all mess up on our diets?  Yesterday I ate about 1/2 cup of M&M's and a handful of the kids Cool Ranch Doritos and a tamale yesterday.  I did increase my water and I did my cardio though...and still lost a lb!  So just do better the next and keep on keeping on!

A Feel Good Thing

Hubs and I don't sit much for tv shows.  There are only a few we tape and watch...and most are on CMT etc

One in particular that we (ok hubs introduced me to it) love is a sweet Variety type show called

It's got an old 1950's feel...(they live in a farmhouse no less) and I may or may not wish I could dress just like her!

What I love even more?  They have a quick recipe segment in there....

This sweet couple just welcomed a baby girl named Indiana this past February and I saw the birth video last night.  Ok cue the tears.  You know me and my midwife natural birthing self was totally in love with everything about this video.  Old farmhouse and birth attendants and baby all make me swoon!

40 to 40 Update.......The Fix Is Finished

Whew....I finished the 21 DAY FIX yesterday

Stats ended at 10lbs and 7" for that 21 days!

I didn't notice much change except in my saddle bag area.  I WILL TAKE IT

So drum roll.....

My 40 to 40 is going strong 17 days until my 40th and I have a whopping 10 lbs to go!!!

So far I lost 30 lbs in this journey and lost count of overall inches!  

Last time I posted pictures I got a bunch of "boy you're brave"  

I wasn't sure if they meant that in a good or bad way....but if it can motivate someone else 

Many times I will see someone's before picture and say to myself "she looks just like me"  and then I see her after and I want that too

SO here you are.....Day 1 and week 9  

everything pretty much is shrinking waist has dropped 5"     chest 4"     hips 4"  thighs each dropped 4"  and about 3 dress sizes

I am just ever so slightly back in all my old old clothes I mean after Lily. 

I made every excuse like anyone else...but I felt justified b/c I have 6 kids.  I mean the girl with 1 or 2 kids and would work out ....I mean hello?  I would too if I had that many kids

I'm constantly in the kitchen prepping food.  Have you cooked daily for a family of 8....2 of which are teenage boys that eat like no tomorrow and bring friends at a last mins notice who can polish down food too?

I start prepping in the morn and again start dinner around 3:30 each day

I felt consumed by food and then I would eat the wrong things (hello Chick Fil A on the way home from Target) or maybe just 2 more pieces of name it.  I also like to bake.  I mean I really love to bake.  Creating yummy desserts is sort of my happy place.  SO it's been 1. hard to not sample 2. hard to cut back 3 hard to make stuff

The 21 Day Fix was about portion control...timing your food...and working out.

The containers at first seemed impossible...Now just fun to come up with combos

Now that the fix is over I will continue using the containers, but alter them a bit.  I will change up things she suggests

I am also starting the 60 Booty Lift Challenge using the Beachbody Brazil Butt Lift series.  

It was a super intense workout that had me laughing up a storm this morning!!!

Sample list of some of my meals the past 21 days
6 small meals during the day


bell peppers w/hummus
carrots w/hummus
apples with cinnamon, honey , and coconut
apples w/greek yogurt and cinnamon
strawberries/blueberries greek yogurt with cinnamon
1/2 english muffin w/1tsp almond butter and 1/2 banana
pineapple w/greek yogurt
any berries and yogurt
KIND bar (did this rarely)

breakfast usually consisted of my Shakeology

mainly salads w/lots of cilantro 1tbs dressing, 1tbs feta and a protein....grilled chicken or flank steak

kept this protein, roasted or grilled or steamed veggies, and 1/2 carb, (wild rice, couscous, 1 tortilla) 

I drank tons of Lemon water (using my YL essential oil)
I took about 15 drops of grapefruit oil a day in a capsule

I also drank 2oz of Ningxia red each day!

I think I'll continue most of these things...


I am still doing mornings in the gym and sometimes in the evening w/my main man!

What I'm Doing Now

Yesterday was St Patrick's Day and my daddy's birthday!  I copied Bake at 350's cookies and made the kids some fun treats yesterday...THAT I COULDN'T EAT.  Still on my 21 Day Fix
I just smelled them a lot and used my memory for the taste.  (just finished another one in my mind)

How is my 21 Day Fix going?
Great.  I just started my last week on Monday and so far my total on the Fix is 7lbs and 5"
I'm hoping at the end of this week my total on the 21 Day Fix will be about 12 lbs!  (fingers crossed)

My overall weight loss has been terrific.  I'm busting my booty to hit my 40 to 40 goal  (a then another 10 after that)

I'm down 27 lbs and about 20" .  I'm back into a handful of my old clothes (pre Lily) and I've noticed my endurance is way way up! 

I'm going to do another round of the 21 Day and add Brazil Butt Lift to it!!

Pinterest called me this weekend.....I had to make some Burlap stuff...I'm addicted to Burlap but man is it messy to cut.  (note:  don't wear black...)

I sprayed my brown burlap white and then painted choc dots on it.  I feel something Easter like coming up.  Ohh if only I was an artist.  I would do one for ever season.  But I can not free hand shapes to save my life!
I need a really creative friend to come over and draw a bunch of stuff on posterboard for me!! (hint hint)

And I finally finished the Tooth Fairy Door
Thought it would be cute to make the door number her birth year for a keepsake item

TTT:  Trip to Target Tuesday

I mean what is a good week without one right?  Nah...I try to keep it once a month or less.  I can get into trouble here.  Frozen was released (and sadly we have NEVER seen it) so I wanted to hop on the bandwagon. 
The bunny ears were in the $1 section and I went for it.  They had brown for the boys and well?  Kids are totally adorable as bunnies

Speaking of bunnies.  Lily is dying for one.  Tell me not to get one.  Tell me they are too much trouble.  Tell me they poop and are messy!  Tell me they aren't really soft and cute.  Tell me stuffed ones are better.

It's Like A Spa Around Here

I've been wearing Joy essential oil as a perfume lately.

I had it on the other day and a lady passed by me and asked what I was wearing ..she told me I reminded her of her spa in California that she would go to.  I thought she was gonna follow me around haha

Then yesterday I diffused Joy and Purification and man oh man...I was in heaven.  All that was missing was some fancy spa lunch and a massage!  

Joy truly uplifts  my spirits and makes me feel great.   I like to apply it over my heart and on my wrists.  My friend used it when she was battling Postpartum Depression.  There is just something relaxing about the smell. 

This morning I've been diffusing Basil and Peppermint.  Now I know you think Basil, but I  cook with that??!!  Yes, you can do that too,  but pure Basil smells mint (to me) like and has a refreshing aroma.  It uplifts and releases tension.  (wanna cook with it?  add it sparingly to some olive oil and drizzle over fresh mozzarella and tomatoes)

Today is day 12 of my 21 Day Fix and it was Pilates.  I thought how perfect to diffuse Basil while working out!  I think I found a new favorite to diffuse to keep me motivated!

Snacks to Satisfy

I will admit.  I miss going to Whataburger and ordering that Green Chile Patty Melt with avocados.  I don't even want to think what the fries and drink added to that were doing to my thighs.  Will I have one again one day...Oh I'm sure I will.  This girl loves a good greasy burger and fries

Do I miss a handful (or 3) of choc kisses ...oh you betcha! 

So in the meantime I am trying to come up with sweet and salty snacks to curb the cravings while I am shrinking those pretty hips and baby belly

Here are a few I have been enjoying

berries and yogurt with cinnamon
I've never been a fan of plain greek yogurt, but found that if I add a bunch of cinnamon and mix some berries I'm in love!!!  (I will sometimes slice an apple in wedges and dip in this too)

sliced apple rings drizzled with honey and more cinnamon w/a pinch of coconut (my favorite after dinner)
Honey makes anything taste better!!!  I then swirl the apple slices to mop up all the cinnamon
(I may lick the bowl never know)

garlic hummus w/veggies

and another I'm gonna have to try that I saw on Pinterest

sliced bananas sandwiched w/almond butter dipped in dark chocolate

 I'm on day 10 of the 21 Day Fix and I'm loving it!  I am sharing some meal ideas on IG so follow me there if you need ideas too!  And please share with me!!!

The Incredible Shrinking Woman

I'm still on the 21 Day Fix if you must know!!  I'm working my bum off for this!  

(a little 21 Day Fix Humor)

Week 7 of my whole Hot to 40 and the start of week 2 of 21 Day Fix

Week 1 of 21 Day Fix...I lost a whopping 5 lbs and 2"

for a grand total of 25lbs and 17" down baby!

It's hard to believe, but not.  I truly want this and I am starting to see the Old Laura come back.  And by Old I don't mean b/c I'm near 40, I mean the girl who I was before getting pregnant 4 more times in a 5.5 yr period!!!  (6 kids takes a toll on the body if you don't take care of it....I should know)

The 21 Day Fix is fantastic.   7 different workouts a week...then repeat for week 2 and 3.  So I'm not bored b/c I'm changing it up each day and getting stronger too.

I will tell you if I hadn't gone all no carbs/sugar and more protein and veggies (basically cutting back my bad foods) I would have struggled with the 21 Day Fix meals

You have these containers and your food needs to fit ....portion control.  I mean you can eat too much of bad stuff too you know.
I really wanted to triple my meat intake...and cheese...and well everything.  I'm always hungry, but you can eat 6 small meals a day on this so I am getting used to that too.  I'm a big 3 meals and snack kind of girl

Here are a few samples of my meals in a day...See a good amount of yummies

here's lunch...salad/dressing/feta/grilled chick and lots of cilantro

dinner one night...grilled chick w/buffalo sauce ...garlic green beans and an avocado 

The workouts are great.  Some are hard some are just right. 

Today I repeated last Monday's workout and I can see a difference in my strength

I am doing extra workouts along with the 21 Day Fix.  I still go to the gym in the morn for 20-25 mins elliptical and weights and evenings with my hubs for more of the same

M/W/F I do the 21 Day Fix 10 min Ab Fix (my probs are belly and thighs)

Today I went into the Teen daughter's closet...(as if she doesn't do this to me daily) and grabbed a shirt of hers I want!  It fits finally...she may or may not get it back.  I took a picture and sent it to her with a haha tag!

So besides being consumed with workouts and stealing the kids clothes...

Learning to Relearn

First off, thanks to those that had encouraging comments!  Posting before pictures is really hard to begin with...let alone on a public forum.  But real is real....and the afters will be worth the journey!

I made excuses like everyone...

I have 6 kids I don't have time
I have to feed everyone else I don't want to make 2 meals
I like my food
I'm too tired to work out with all I do
The excuses kept coming

Having to take a good look at how I have been eating the past 5 years is a huge eye opener.  I really just ate what I liked when I wanted it.  But with having 3 additional kids in a 4 year period and aging....(shock)  my body doesn't respond like it used to

The past 6 weeks I cut out horrible nasty processed foods and ate great

These next 3 weeks on the 21 Day Fix I am eating smaller portions but more often.  Which is huge for me.  I'm a 3 big meals 1 snack a day girl and NEVER after dinner.  So I'm having to learn how to eat to fuel my body!

Monday I had my little containers all mapped out with what I would eat

Each day I get 

3 green containers (your veggies)
2 purple (your fruits)
4 red (protein)
2 yellow (starches)
1 blue (cheeses or nuts)
1 orange (seeds or dressings)
1 tsp (nut butters or chocolate chips)

Here is what I ate on Monday

(yes had a shake and same lunch again....)

I'm trying really hard to not cheat on this meal plan.  But

There is always a but

I still want my coffee I have cut my cup in half and my creamer (which is a no no) in half too...which basically is enough to wet my whistle and that is enough

The work outs are intense.  Well for me since I'm so out of shape.  All I can say is THANK GOODNESS THESE ARE ONLY ONCE A WEEK. 

There are enough workouts for the entire week and then repeat for 21 days.

I have to modify a bunch and a few times stop...I'm hoping by the end of this I have few modifications and zero stops!!!

For 21 Days It's On (Before and After Photos Posted)

Ok it's been 6 weeks

6 weeks of 2 a days and then more floor exercises at home PLUS no to low carbs and no to low sugar  and limited fruits

I did have cheat days.  Every Sunday it's Pizza Night in our house.  I had 2 pieces each Sunday.  Along with a little bit of the desserts I made for Wednesday Night Dinners with the Inlaws

How did I do?

20 lbs and 15" overall


I just joined Beachbody to do the  21 DAY FIX

Am I scared?  You betcha  
Am I excited? You betcha

I am excited to see where the next 21 days of hard work can take me.

Here is a sample of what I'm talking about

Am I going to beat you down with how I'm doing weekly?  Probably.  This is my digital journal so to speak and It's gonna be nice to look back at this journey and see how hard I worked.  And I've worked hard.  If you know me you know my love of cooking and baking and how I love my sweets.  The first week I would say was the hardest.  I remember txt a few friends saying I was going to die and how much I needed my sweets and or chips and pasta bread

Now I don't want those things on a daily basis...(ok once a week would be supreme)

I have the Shakeology now that I can use for a breakfast.  It's probably my HARDEST part of the day.  I wake up and head to the gym first thing while kids are still asleep.  By the time I get home and kids wake and I'm running kids to school and changing and feeding etc....the morning is gone and I realized I didn't have my breakfast.  This will be a nice sweet treat and breakfast all in one.

The little containers have me worried.  I mean only 3 for veggies?  and I have 2 for carbs and fruits.  I gave those up and increased my veggies over the past 6 weeks so now I get to reintroduce them.   I want this to work so I'll give it a go...I'm game for eating carbs haha

My before pictures are humbling.  6 babies and eating what I want and not exercising packed the pounds on.  I had a closet full of clothes waiting for me.  Not to mention my 40th around the corner...I knew I needed to step it up

Back on January 26th I went to the gym and stepped on the scales and started crying.  I knew it was time.  I put on the tightest spandex shorts I could find and made hubs take pictures of me.  I again started crying.  I knew the old me was under there somewhere and I was determined to find her again.

The next picture I made him take was week 4.  I didn't see any changes in the pictures and was horribly discouraged.  My husband and Mom said they could see something and my kids said I looked different.  But I didn't feel it.

I look real please so I cut my head off..also last one taken outside in the snow and I was yelling with closed mouth to hurry...I have jokers in the family who kept stalling bam
my thighs are the hardest part to work out

I can't wait to see what another 3 weeks brings!  Come on 21 Day Fix

Today was my first workout and I will admit I struggled.  I had to modify a few (ok a lot) of the times.  30 mins later it was over and I survived

Shakeology for breakfast: choc with almond extract and 1 cup chilled coffee (1 red)

and snack (1 purple 1/2 red)

Not a bad start so far!
